GARDEN BOUNTY BEEF KABOBS

Garden Bounty Beef Kabobs image

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add the beef. Seal bag and turn to coat; refrigerate for 1 hour., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread beef and vegetables. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes or until beef reaches desired doneness, turning occasionally. , In a small saucepan, combine the dipping sauce ingredients. Cook over low heat until heated through. Serve with kabobs.

2 tablespoons olive oil
1 tablespoon molasses
3 garlic cloves, minced

1 pound beef top sirloin steak, cut into 1-inch cubes

1 medium zucchini, cut into 1-in. slices

1 cup reduced-fat sour cream
1/4 cup fat-free milk
3 tablespoons onion soup mix
2 tablespoons Dijon mustard
1/8 teaspoon pepper

MIDDLE EASTERN BEEF KABOBS

These are great either right off the grill or at room temperature - which makes them the perfect dish to pack up and take to the park on a hot summer night. The preserved lemon is a surprisingly good compliment to the beef tenderloin. Try them with a side of Cucumber-Yogurt Sauce.

Middle Eastern Beef Kabobs image

Steps:

  • Once your meat and veggies have been prepped let the skewering fun begin! Thread a piece of green pepper onto the skewer. Follow it with a cube of beef, then one half of a preserved lemon, a couple of pieces of red onion, another piece of beef, a piece of red pepper and cap it with a mushroom. Repeat the process with the rest of the skewers. Set all of the kabobs into a roasting pan in one layer and set aside.
  • Place the remaining ingredients in a medium sized bowl and whisk until well incorporated. Pour the mixture over the kabobs and refrigerate 1 hour.
  • Preheat an outdoor charcoal or gas grill to high heat. Place the kabobs on the grill and cook 3 minutes per side. Remove and serve immediately or let cool, pack 'em up and take them on a picnic.
  • Serve with Cucumber-Yogurt Sauce.
  • Combine all ingredients in a food processor and pulse several times to make a chunky sauce.

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine Italian seasoning, basil, paprika, and black pepper in a mixing bowl. Add olive oil and stir marinade well. Add squash, zucchini, onions, and tomatoes and let marinate for 5 minutes.
  • Slide vegetables onto wooden or metal skewers, alternating the different types as you go.
  • Cook skewers on the bottom rack of the preheated grill, turning every 2 minutes, until vegetables are tender, 6 to 8 minutes total.

  • Preheat grill to medium heat. Thread steak, vegetables and oranges alternately onto 12 skewers; place in shallow dish.

These colorful kabobs are a wonderful way to showcase fresh veggies from your garden. Each bite is tender and flavorful, and the aroma is amazing. This is a recipe I found in TOH magazine and posting for safe keeping. Time doesn't include marinading time, so allow at least 2 hours for marinating, but more is better on the flavor. Feel free to add any veggies of your choice.

Marinated Veggie Beef Kabobs image

Steps:

  • In a small bowl, combine the first eight ingredients. Pour half the marinade into a large resealable plastic bag; add beef. Seal bag and turn to coat.
  • Pour remaining marinade into another large resealable plastic bag; add tomatoes. Cut remaining vegetables into 1-in. pieces; add to bag. Seal bag and turn to coat. Refrigerate beef and vegetables for at least 2 hours.
  • Drain and discard marinade from beef. Drain vegetables, reserving marinade for basting. On eight metal or soaked wooden skewers, alternately thread beef and vegetables.

Steps:

  • Drain pineapple saving juice.
  • Combine juice and next 6 ingredients, mix well.
  • Pour in large shallow dish.
  • Add meat, cover and marinate in refrigerator over night.
  • Drain meat, retaining marinade.
  • Bring marinade to a boil in a saucepan.
  • Add mushrooms, reduce heat and simmer, uncovered, for 10 minutes.
  • Drain, saving marinade.
  • Alternate meat, pineapple, mushrooms, onions, green peppers and potatoes as desired on skewers.
  • Grill over medium coals 10-15 minutes, basting frequently with marinade and/or BBQ sauce.

Steps:

  • In a saucepan over low heat, mix the tomato juice, butter, onion, ketchup, mustard, salt, paprika, pepper, garlic, Worcestershire sauce, and hot sauce. Simmer for 30 minutes, remove from heat, and allow to cool.
  • Preheat grill for medium heat.
  • Thread the sirloin cubes, mushrooms, cherry tomatoes, onion quarters, and green pepper pieces onto skewers, alternating as desired. Drizzle some of the sauce over the kabobs.
