- Mix first five ingrediants together. Form mixture into small balls, place in refridgerator for aprx 30 minutes to firm.
- Heat olive oil in skillet (medium heat).
- Add meatballs to skillet, turning over frequently until cooked through (no pink).

CHICKEN WITH HERBED GOAT CHEESE
Steps:
- Preheat the oven to 375 degrees.
- Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

- Preheat oven to 350°. In a large bowl, combine bread crumbs and eggs. Add sausage; mix lightly but thoroughly. Divide into 36 portions. Shape each portion around 1/2 teaspoon cheese to cover completely. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until cooked through, 25-30 minutes., Meanwhile, in a large saucepan, bring vinegar, sugar, cinnamon, cloves and star anise to a boil. Reduce heat; simmer 5 minutes. Discard cinnamon, cloves and star anise. Add figs; cook until softened, 8-10 minutes. Remove from heat; cool slightly. Transfer to a blender. Add 1 cup water; process until almost smooth. Serve with meatballs. If desired, top meatballs with chopped chives. Freeze option: Freeze cooled meatballs and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently; add a little water if necessary.

- Preheat the oven to 375. Line a baking sheet with parchment or foil (spray lightly with oil, if using foil). To make the meatballs, lightly mix together the first 10 ingredients (through ground pepper). Form into 1-1.5″ meatballs (you'll get about 25) and place on the baking sheet. Break the goat cheese into several small pieces and place one piece on the top of each meatball, pressing down lightly. Drizzle with olive oil, if using (it will help with browning) and bake about 15 minutes, or until cooked through. Meanwhile, place the bread slices on a baking sheet and drizzle lightly with olive oil. Place in the oven for about 5 minutes or until crisp (just put them in during the last 5 minutes the meatballs are baking). After you take the crostini out of the oven, rub it with the cut side of the garlic clove, while the bread is still hot. To assemble: Place 1 basil leaf on top of each slice of toast. I wanted to make chicken meatballs for quite some time and was never able to find a good recipe. I came across one, but modified it based on my own preferences. I thought these came our absolutely delicious and served them with pasta and marinara sauce and homemade garlic bread!

- Preheat the oven to 425 degrees F (220 degrees C).
- Combine chicken, egg, cream cheese, Parmesan cheese, garlic, olive oil, bread crumbs, basil, red pepper, garlic powder, salt, pepper, parsley, and oregano in a freezer-safe bowl and mix well. Place in the freezer for 15 minutes to make the mixture firmer and easier to handle.
- Use an ice cream scoop or cookie scoop to form the mixture into about 14 meatballs a little larger than a golf ball. Add a piece of mozzarella cheese to the center of each meatball, making sure cheese is covered by meat. Place meatballs on a nonstick baking sheet.
- Bake in the preheated oven until juices run clear, 20 to 25 minutes.

- Preheat oven to 450F. Drizzle olive oil on a rimmed baking sheet, then place chopped red onion and bell peppers on top. Sprinkle with ½ tsp kosher salt, then toss to thoroughly coat.
- In a large mixing bowl, add ground chicken, eggs, breadcrumbs, parsley, za'atar, sumac, garlic, remaining salt, and lemon zest. Gently stir until will mixed.
- Use a ¼ cup cookie scoop to portion out meatballs. Take 1 level scoop of chicken meatball mixture and place in your hand. Add about ½ tsp of goat cheese right on top in the center. Scoop out another level ¼ cup of chicken and place directly on top of goat cheese. Use your hands to form the meatball and seal it around the cheese. Place on prepared baking sheet with veggies. Repeat with remaining chicken and goat cheese until all meatballs are formed. 2 lbs of ground chicken should yield approximately 16 meatballs.
- Cook for 13-15 minutes, or until an internal temperature of 165F is reached. Serve meatballs with roasted vegetables immediately, adding extra crumbled goat cheese on top as wanted.
