GRAMMY'S CHOCOLATE COOKIES
Anne Feldman's grand prize-winning recipe in our Cookie of the Week contest was a gift from her grandmother Ivyle Phinney Morrow.

Steps:
- Sift together flour, cocoa powder, baking soda, and salt. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix to combine. Gradually add dry ingredients, and combine with mixer on low speed. Cover bowl with plastic wrap, and chill until dough is firm, about 1 hour.
- Preheat the oven to 350 degrees. Line baking sheets with Silpat baking mats. Roll dough into 1-inch balls. Dip top of each ball into sugar. Place on prepared baking sheets about 1 1/2 inches apart. Bake until set, about 8 minutes. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
CHOCOLATE LACE COOKIES

- Preheat oven to 350°. In a saucepan, combine brown sugar, butter and milk. Cook and stir over medium heat 3-4 minutes or until slightly thickened. Stir in pecans, flour and vanilla. Drop by 1/2 teaspoonfuls 3 in. apart onto foil-lined baking sheets. Bake 5-7 minutes or until golden brown and lacy. Cool completely before carefully removing from foil., In a microwave, melt chocolate chips; stir until smooth. Spread 1 teaspoon melted chocolate on bottoms of half the cookies; cover with remaining cookies. Refrigerate 10 minutes or until set. Store between pieces of waxed paper in an airtight container.

- Cream butter and sugar together in mixer. Add eggs and vanilla. Mix flour, baking soda and salt. Mix only until blended. Don't overbeat. Add choc bits, almonds, oatmeal and grapenuts. Drop rounded teaspoons of dough onto parchmet paper lined baking sheets leaving 2" on all sides. Cookies will spread. Bake at 350 12 to 15 minutes until golden brown. (See Instructions above)
GG'S LACE COOKIES
My grandmother had two cookies she was famous for...this is one of them. they are crunchy, rich, fancy and almost a bit like brittle candy. These are sandwich cookies and great for parties and having with tea.

Steps:
- Place butter, shortening, syrup and sugar in the top of a double boiler and bring to a boil over direct heat. Remove from heat and blend in flour and nuts.
- Drop by teaspoonfuls on a greased, foiled line cookie sheet.
- Bake at 325 degrees for 8-10 minutes. Cool slightly before removing from sheet.
- Place chocolate in new pan and melt over double boiler. When almost melted, remove from heat and stir until melted.
- Brush one cookie with chocolate and cover with another.
- Refrigerate til set.

- Heat oven to 375°F.
- Grease baking sheets.
- Combine 1/4 butter flavor Crisco stick, corn syrup, brown sugar and vanilla in large bowl.
- Beat at medium speed until well blended.
- Combine flour and salt.
- Mix into creamed mixture at low speed until blended.
- Stir in chocolate chips and nuts.
- Drop teaspoonfuls of dough 4-inches apart onto baking sheets.
- Bake one baking sheet at a time at 375° for 5 minutes or until edges are golden brown.
- Do not overbake.
- Cool 2 minutes on baking sheets.
- Lift each cookie edge with spatula.
- Grasp cookie edge gently and lightly pinch or flute the edge, bringing it up to the center.
- Work around each cookie until completely fluted.
- Remove to cooling rack.

- Sift together flour, cocoa powder, baking soda, and salt in a bowl.
- In the bowl of an electric mixer fitted with the paddle attachment, beat sugar and butter on medium speed until mixture is light and fluffy, about 2 minutes. Add eggs and vanilla, and beat to combine. Reduce speed to low, and gradually add flour mixture; beat to combine. Form dough into a flattened disk, and chill until firm, about 1 hour.
- Preheat oven to 350 degrees. Shape dough into 1 1/4-inch balls. Roll each ball in sanding sugar. Place on baking sheets lined with parchment paper, about 1 1/2 inches apart. The cookies can be stored between layers of parchment in an airtight container at room temperature for up to 1 week.
GRANNYS CHOCOLATE CHIP COOKIES
These cookies are the best cookies I have ever had, have ever cooked, and can not buy them at the store. If you do make these make sure you make enough for everyone!!!! Of course some things have been modified to meet my personal taste buds.

- Mix flour, baking soda, and cinnamon.
- Beat butter, brown sugar, white sugar, at medium speed until light and fluffy.
- Beat in egg and vanilla.
- At low speed, beat in flour mixture until blended.

- In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
- Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before dissolving back into the mixture.
- Sift in the flour and baking soda, then fold with a spatula to combine. (Be careful not to overmix, as the gluten in the flour to toughen resulting in cakier cookies.)
- Fold in the chocolate chips.
- Chill the dough for at least 30 minutes or, for a more intense, toffee-like flavor and deeper color, chill overnight. The longer the dough rests, the more complex its flavor will be.
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Scoop the dough with an ice-cream scoop onto the prepared baking sheet, leaving at least 4 inches (10 centimeters) of space between cookies and 2 inches (5 centimeters) of space from the edges of the pan so that the cookies can spread evenly.
- Bake for 12-15 minutes, or until the edges have started to barely brown. Top each cookie with a pinch of sea salt as soon as they come out of the oven, then let cool completely.
- Serve with a glass of milk.

My grandmother made these in her woodstove oven and I have always guessed at the cooking temperature and cooking times. As is usual with lots of older recipes no exact amount of flour was listed either.
