GRANNY'S FILLED COOKIES
My granny always made these around Christmas. They are the easiest, best tasting cookies around. Be warned, they are addictive.

Steps:
- Mix cream cheese and butter well in large bowl until well blended and creamy.
- Add in flour slowly, beating well after each addition. Roll dough into 1-inch balls and wrap well in cellophane. Store in fridge overnight.
- Preheat oven to 350 degrees F (180 degrees C).
- Roll out dough balls flat and place a 1/2 teaspoon full of the jam in the center. Fold sides over and place on ungreased cookie sheet.
- Bake for 13-15 minutes until brown and the jam starts to bubble hard. Cool for 3 minutes and place on cooling rack. Sprinkle with powdered sugar if desired.

- Preheat oven to 350 F.
- In large bowl, combine first 4 ingredients; beat well.
- (Lightly spoon flour into measuring cup; level off.) Add flour and soda; mix well.
- Stir in dates and nuts.
- Drop by teaspoonfuls, 2 inches apart, onto ungreased cookie sheets.
- Bake 10 to 15 minutes until golden brown.

DROPPED DATE FILLED COOKIES
Do you just love filled cookies but hate the fussiness of making them? These are dropped and you don't have to roll them out. The filling is even dropped on top of the drop. Easy and good.

Steps:
- Make the filling first by putting the dates, sugar, and water in a saucepan and cook slowly,stirring constantly till thickened; add the nuts and cool.
- COOKIE BATTER:.
- Mix shortening, sugar, and eggs thoroughly.
- Stir in water and vanilla.
- Add the flour, salt, soda, and cinnamon; mix well.
- Drop by teaspoons on ungreased sheet.
- Place a teaspoon of the date filling on top of the dropped dough and then a tiny bit of dough on top of the filling.
- Bake till lightly browned and done in a 375 degree oven for 8-10 minutes.

GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

Steps:
- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

Steps:
- Mix all filling ingredients (except nuts) together over medium heat. Add nuts -- stirring constantly.
- Once sugars are disolved and mixed with other ingredients, take off heat and let cool.
- Mix shortening, sugar and eggs thoroughly. Stir in buttermilk. Sift in flour, baking soda, and salt.
- Let chill at least 1 hour.
- Roll dough in ball and make a thumb print in center of the cookie. Add approx 1 tsp date filling in the hole, then cover top of filling with a small piece of dough patted down lightly.
- Bake at 400 degrees for 8-10 minutes.

Steps:
- Bring dates, water, and sugar to a boil. Reduce heat to low and simmer, stirring frequently, until dates are thickened, about 5 to 7 minutes. Set aside to cool (can be prepared the day before, if needed).
- Cream butter and sugar with your mixer. Add in the egg, water and vanilla.
- Stir together the flour, baking soda and salt. Gently blend the dry ingredients to the butter mixture.
- Preheat oven to 350°F. Lightly grease your cookie sheet or use a silicone baking mat.
- Drop cookie dough by teaspoonfuls onto a lightly greased cookie sheet or use a silicon mat. Place about 1/2 teaspoon of date mixture on the top of each cookie, then a small dab of cookie dough on top of the date mixture.
- Bake at 350° for 10 to 12 minutes. Cool 5 minutes on cookie sheet before moving to a cooling rack.

- Beat shortening, white sugar, and brown sugar in a bowl using an electric mixer until creamy and smooth.
- Mix milk and vinegar together and let stand 5 minutes to make 'sour milk'. Stir sour milk, eggs, and vanilla extract into shortening mixture.
- Sift flour, baking powder, baking soda, salt, and nutmeg together in a large bowl. Mix flour mixture into shortening mixture until incorporated. Refrigerate until fully chilled, 2 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).

- Preheat oven to 350 degrees F (175 degrees C).
- In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
- Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
- On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.

- Cream butter and 1 cup sugar; add eggs and beat well.
- Add milk.
- Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
