Grilled Chicken Breast With Black Beans And Goat Cheese Sauce image

Steps:

  • Cover the beans with cold water; either soak them overnight or bring them to the boil. If boiling, boil them for one minute, remove the pan from heat, cover and let sit for one hour.
  • Drain the beans and combine them in a pan with the stock, vegetables and seasonings. Bring to a boil, remove any scum and simmer for about one-and-a-half hours, partially covered, until the beans are tender but not mushy. Keep the beans warm while preparing the sauce and chicken.
  • Prepare the sauce by simmering the wine and shallots in a saucepan until the liquid is reduced by half. Add the cream and again reduce by half. While the liquid is reducing, preheat the broiler. Pour the liquid into a blender and add the cheese, butter and pepper. Puree until smooth. For a perfectly smooth sauce, strain the liquid. Keep the sauce warm, covered, over very low heat.
  • Season the chicken breasts on both sides and grill or broil about four or five minutes per side; do not overcook.
  • Slice the breasts and pour the sauce over the slices. Serve with the beans to one side.

Steps:

  • Combine lime juice, vegetable oil, red pper, and garlic in a large zip-top heavy-duty plastic bag.
  • Add chicken; seal bag, and marinate in refrigerator 8 hours, turning bag occasionally.
  • Bring water to a boil in a small saucepan; add bell pepper and onion.
  • Cook 30 seconds; drain.
  • Plunge into ice water; drain well.
  • Set aside.
  • In a food processor, add beans, orange juice, balsamic vinegar, salt, pepper, and garlic.
  • Process until smooth.
  • Pour into a saucepan; cook over medium-low heat until heated.
  • Remove chicken from bag and grill over medium-hot coals.

  • Preheat grill. Mix together the goat cheese, olives, red pepper and thyme in a small bowl and season with salt and pepper to taste. Lay each breast out and fill with the cheese mixture. Brush the breasts with the olive oil and season with salt and pepper to taste, secure with toothpicks. Grill for 8 to 10 minutes or until golden brown and cooked through.

  • For chicken: Preheat oven to 350°F.
  • Pound chicken between sheets of waxed paper to thickness of 1/4 inch using meat mallet.
  • Pat chicken dry.
  • Combine cheese, green onions and basil in small bowl.
  • Season with salt and pepper.
  • Spread cheese mixture lengthwise over half of each chicken piece.
  • Tuck short ends in.
  • Roll chicken up, starting at one long side, into tight cylinders.
  • Tie ends with string to secure or secure with a toothpick (my preference).
  • Dip chicken in egg, allowing excess to drip into bowl.
  • Roll in breadcrumbs, shaking off excess.

  • Make beans:
  • Heat olive oil in heavy medium saucepan over medium-low heat. Add onion and chilies; cook until onion is translucent, stirring occasionally, about 8 minutes. Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a skillet over medium heat; cook and stir shallot until translucent, about 5 minutes. Pour balsamic vinegar into skillet and bring to a boil. Reduce heat to low and simmer until balsamic vinegar mixture is reduced by half, about 10 minutes. Stir often.
