- In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

- In a large mixing bowl, blend together salad dressing and seasonings.
- Next, add potatoes and onions and toss until covered.
- Divide potato mixture evenly among 6 foil packets.
- Double fold ends of packets to seal but leave enough room for heat to circulate Place packets on heat grill and cook for 25 to 30 minutes.
- Make sure lid is down while cooking.

- When the fire is lit but not ready, lay out 8 pieces of foil (about 12 by 8 inches) and brush with olive oil.
- Shingle an eighth of the potatoes in a circle in the center of each piece of foil. Break the onion slices into rings and scatter evenly over each potato ring. Equally divide the remaining olive oil, rosemary, salt, and pepper over the potatoes.
- With the potato rings intact, bring the two large edges of foil to the center, sealing firmly.
- Fold over the other two short edges to seal. Place on a medium or medium-hot fire for 20 to 25 minutes or until the potatoes are cooked through (Cooking in foil packets is not an exact science, so remember to check one packet after 20 minutes for doneness and to make sure the bottom isn't burning.

LEMON, POTATO AND FETA FOIL PACK
We channeled the savory and comforting lemon potatoes on the menu of so many Greek restaurants for this grilled foil pack. It's an easy side dish to serve alongside grilled seafood or poultry. Grilling in foil caramelizes the potatoes and onions and keeps cleanup to a minimum.

- Prepare a grill to medium-high heat (about 450 degrees F). Halve the lemon. Cut one half into quarters and thinly slice. Set the other half aside.
- Add the sliced lemon to a large bowl along with the potatoes, onion, garlic, oregano, red pepper flakes, 1 teaspoon salt and a generous grinding of black pepper. Drizzle with the olive oil and toss well.
- Spread the potatoes in the middle of a piece of heavy-duty aluminum foil that's about 30 inches long. Scatter the feta cubes over top. Bring up the long sides of the foil and fold a seam in the center. Fold the ends in to seal the ingredients; make the seal as airtight as you can, but don't wrap the ingredients to snuggly; you want some room for the air to circulate around them as they cook.
- Place the packet on the grill grate. Grill, covered, moving the packet occasionally so it cooks evenly, until the potatoes are caramelized and cooked through, 20 to 25 minutes. (You should be able to hear the potatoes sizzling in the packet as they cook.)
- Carefully unwrap the potatoes and squeeze the remaining lemon half over top. Serve sprinkled with parsley.
GRILLED POTATO BUNDLES

- Pile the potatoes and onions evenly on 6 squares of foil. Add 2 tablespoons butter to each and splash on some cream. Sprinkle on some paprika, salt and black pepper, then finish with a sprinkle of minced parsley on top. Fold the foil pieces to wrap into bundles.
- Place the potato bundles on the hottest spot on the grill for 30 minutes. Serve the bundles right on the dinner plates.

- Prepare a grill for medium-high heat.
- In a large bowl, combine the potatoes, olive oil, onions and garlic. Season with salt and pepper.
- Cut six 12-inch square sheets of foil and place them on a baking sheet. Put one-sixth (about a cup) of the potato mixture in the center of each piece of foil. Fold the sides of the foil over the potatoes, covering them completely and sealing them into packets.
- Transfer to the grill and cook until tender, 15 to 20 minutes.
FOIL PACKET GRILLED POTATOES
I use small to medium size potatoes. You can either sprinkle real shredded parmesan cheese on these packets during the last five minutes, or just stir in a teaspoon or so of the dry grated stuff in the packet before cooking. One day I'm going to add green peppers and sausage to this in the packet.

- Peel and dice potatoes - about 1-inch size pieces.
- Mix olive oil and spices in large bowl.
- Stir in potatoes and mix well.
- (Optional) Microwave potatoes for a minute or two if you don't want to cook them on the grill as long.
- Separate potatoes into a few 12-inch packets and wrap up.
- Cook 30 minutes on the grill or until done to your liking.
- Sprinkle with shredded parmesan when done and seal foil back up to melt it, or sprinkle it on during the last 5 minutes on the grill.

- Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
- Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
- Grill until potatoes and carrots are soft, about 40 minutes (flip bags at least 3-4 times during grilling). Remove from grill and place the veggies in a large bowl and add the sour cream, mixing well.

- Heat grill to medium heat.
- Cut a piece of foil about 18 x 18 inches square. Lightly spray foil with cooking spray.
- Place sweet potatoes on foil, top with yellow pepper.
- Mix together the melted honey, butter, and seasoned salt. Pour over potato/pepper mixture. Toss slightly to distribute honey/butter.
- Note: You can add the chives to the vegetables now, or wait until after cooking and sprinkle them on top.
- Fold foil over vegetables and crimp to seal. Make sure you have a tight seal, but allow for circulation and expansion during grilling.
- Grill 15-20 minutes or until sweet potatoes are tender. Cut open foil packet and sprinkle with chives.

- Heat your grill to medium high.
- Tear off 8 sheets of aluminum foil, 12x15 or so.
- Butter 4 sheets and lay them out on counter.
- Slice spuds and onion thin.
- Take 1/3 of each potato slices and lay out on buttered foil the size of your cheese slice.
- Top with onion's and ham, then with cheese, salt, pepper and cayenne.
- Repeat ending with a few spuds on top.
- Fold foil into tight packets and cover packets with one more sheet of foil.
- Place on grill, cover and cook for 20 minutes, turn and cook another 20 minutes.
- Unwrap and eat.
- I have pre-made these to take camping.

- Whisk together oil, mustard, thyme, salt, and pepper in a large bowl.
- Add potatoes and onions to mustard oil. Toss to coat.
- Set six 18x9 inch sheets of heavy duty aluminum foil on work surface. Spray foil with nonstick cooking spray. Divide potatoes and onions between the sheets, placing in the center of the left half of each sheet. Fold right half of foil over veggies and fold edges of packages together to seal well.

POTATO PACKETS
This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

- Tear off 4 large squares of aluminum foil and spray with Pam.
- Scrub potatoes.
- Slice with skins on (like you would to fix fried potatoes).
- Divide potatoes among foil squares.
- Shake soup mix package before opening to mix it up well. Divide among 4 foil squares. You may or may not use whole package, depend on personal preference.
- Sprinkle 1 tablespoon cheese on each square of foil.
- Put 1 tablespoon of butter on top of each foil square.
- Fold sides to completely cover potatoes and form a square packet.
- Put on grill, my DH, puts them on the shelf of our grill and cooks for 45 minutes.
