Steps:
- In a food processor combine 2 3/4 cups of the flour (reserve the remaining flour for rolling out the dough) with the lard or shortening.
- Pulse several times until the fat is evenly distributed throughout the flour and no particles of fat are visible.
- Dissolve the salt in 2/3 cup of the warm water.
- With the machine running, pour the liquid through the feed tube in a steady stream and stop the machine once the dough has come together in a ball.
- Feel the dough; it should be a medium-stiff consistency, not too firm but not as soft as most bread doughs.
- If the dough is too stiff, divide it into several pieces, sprinkle with 1 or 2 tablespoons of the remaining water and process again until a ball forms.
- Divide the dough into 12 portions, roll into balls and place on a flat surface or plate.
- Cover with plastic wrap and allow dough to rest for at least 30 minutes.
- On a lightly floured surface roll each ball into a 7-inch circle by flattening the ball of dough, lightly flouring it, and with a rolling pin rolling forward and backward over the dough, then turn it a sixth of a turn and roll forward and backward again.
- Repeat the turning and rolling process until a 7-inch circle is formed, re-flouring the work surface as necessary.
- Place the tortilla on a plate and cover with plastic wrap.
- Repeat the rolling out process for the remaining 11 balls of dough.
- Heat a flat cast iron griddle over moderately high heat.
- Lay a tortilla on the griddle and cook for 20 to 45 seconds until tortilla bubbles and lightly browns on the underside.
- Flip the tortilla and cook it for another 30 to 45 seconds.
- The tortilla should be lightly browned but still soft and flexible.
- Transfer the cooked tortilla to a heavy towel and wrap it up.
- Cook the remaining tortillas in a similar manner and store stacked in the towel to keep them warm and soft.
- Tortillas can be stored in a sealable plastic bag and refrigerated until ready for use.
- To reheat the tortillas, tuck them in an"envelope" made out of aluminum foil and heat in a 325°F oven for 10 to 15 minutes.

FLOUR TORTILLA RECIPE
Recipe for making flour tortillas from Thibeault's Table. Credit to Ann from the gardenweb internet addy as the majority of this receipe comes from her post: http:// ths.gardenweb.com/ forums/ load/recipex/ msg0611460316237.html?7 I like this easy recipe for tortillas that uses staples usually on hand. I am battling cancer and cannot eat yeast or sugar, so tortillas are a great alternative to bread!

Steps:
- Sift the flour, salt & baking powder into a large mixing bowl.
- Into the dry ingredients cut in the shortening, or add oil if you are using this option, & mix with your fingertips to combine.
- Add the milk or water, working the liquid into the dough until a sticky ball forms.
- Wrap in plastic and let rest for at least 30 minutes.
- Divide the dough into 8-10 balls (for small tortillas) or 6-8 balls for larger ones, cover them again with the damp cloth.
- Lightly dust a counter or pastry board w/flour & roll out each ball of dough into a circle or oval approximately 1/8" thick. If you want nicely rounded tortillas, trim off any ragged edges & discard. Don't roll the dough out more than once or the tortillas will be tough.
- Heat a dry griddle or heavy skillet over high heat for 5 minutes. Cook the tortillas 30 seconds on each side or until the dough looks dry & slightly wrinkled & a few brown spots form on both surfaces. Do not over cook or they will be hard. Butter and roll up and wrap in damp tea towel to keep warm as you cook the other tortillas.
- (I place cooked ones wrapped in the damp towel in a low 200 oven to keep warm, while I am cooking the rest.) Serve warm.~~.

- Cut dough into 4 equal pieces. Using a lightly floured rolling pin, roll each piece into 8-inch rounds, less than 1/8 inch thick. Place tortillas on a parchment-lined baking sheet, layering parchment between each to prevent sticking. Cover with parchment, then with a damp kitchen towel. Let rest for 30 minutes (or cover and refrigerate overnight).
- Place a cast-iron skillet over medium heat. Cook tortilla until brown spots appear, about 1 minute per side. Transfer to a plate, and cover with parchment and then a damp towel. Repeat. Serve immediately.

- Place flour, baking powder, salt and lard into a food processor and mix until it has been incorporated, if you don’t have a food processor you could mix it by hand, rubbing the lard through the flour.
- Add your water and knead until a smooth dough forms, if using the processor, mix until it has come together, then turn out and knead for a minute by hand, just making sure you have a nice silky smooth consistency. It may be slightly tacky, continue to knead until it no longer sticks to your hands, but is still soft and pliable. Add a little extra flour if you need to, but don’t over do it.
