Honey Nut Panna Cotta image

Steps:

  • Dissolve the gelatin in 2 tablespoons warm water and set aside to bloom.
  • In a small skillet over medium heat, bring the gelatin mixture, cream, milk, cinnamon, vanilla, honey and cereal to a simmer. Remove from the heat and let steep for 5 minutes to marry the flavors.
  • Place the yogurt in a large bowl. Strain the milk mixture over the yogurt and whisk to combine. Divide among eight 1/2-cup parfait glasses or ramekins and chill for at least 2 hours.
  • Combine the strawberries, lemon juice and sugar in a small bowl, and let macerate while the panna cotta sets.
  • Serve the panna cotta with the macerated berries.

One 1/4-ounce packet unflavored gelatin
1 cup heavy cream
1 cup whole milk
1 cinnamon stick
1 teaspoon vanilla extract
1/4 cup amber honey
1 cup honey-flavored breakfast cereal, such as Honey Nut Cheerios
1 1/2 cups full-fat Greek yogurt
1 pint strawberries, hulled and quartered
1 tablespoon sugar
1 tablespoon lemon juice (1/2 lemon)

Honey-Nut Cereal Treats image

Steps:

  • Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and honey and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the almond butter and vanilla. Add the whole oat cereal, puffed wheat cereal and 1 cup of the chopped mixed nuts. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer. Scatter the remaining 1/2 cup of chopped nuts on top and press into the top (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
  • Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.

  • Cook peas according to package directions just until tender, but not mooooooooshy.
  • Meanwhile, in skillet, melt butter.
  • Stir honey into butter.
  • Drain cooked peas and transfer to preheated serving dish.
  • Salt& pepper according to your taste.
  • Pour honey butter over top.
  • Sprinkle with chopped pecans.
  • Toss lightly and serve immediately.
  • This does not reheat well-- the sauce develops an off color.
  • Tastes fine, looks funky.
