Steps:
- Heat olive oil in a heavy sauce pan.
- Sauté garlic and onion, until onion is transparent.
- Then add bay leaf, ground meat, cook until meat is no longer pink.
- Stir in diced tomatoes, water and tomato paste, tomato sauce.
- Add all the spices and then lemon juice.
- Bring to a boil then reduce to simmer, uncovered for 1 to 2 hours or til sauce is desired consistency, stirring occasionally.
- Remove bay leaf and then add brown sugar to taste.
- Note: If you use ground turkey use two beef cubes or two teaspoons of beef soup base (use no salt).

ITALIAN SPAGHETTI WITH MEAT SAUCE
This recipe comes from my family's cookbook, and I think was submitted by my aunt. The slow cooking is what gives the sauce its great flavor, but don't add too much spaghetti to the sauce or you won't be able to taste it. You could also just dish the sauce onto the spaghetti, instead of combing them. This is a great dish to make when you need to feed a lot of people, because it makes a ton of food. Don't forget to take out the bay leaves!

Steps:
- Brown hamburger and onion in dutch oven or large pot.
- Add all other ingredients and stir well.
- Cover and cook over medium-low heat, partially covered (allow steam to escape) for about 3 hours, stirring frequently.
- About 1/2 hour before serving time, cook the spaghetti noodles according to package directions.
- Remove the bay leaves from the meat sauce and combine with pasta.
- Add cheeses just before serving.

This is a recipe that I found in "The Allergy Self-Help Cookbook" by Majorie Hurt Jones. The original recipe does not call for ground beef and I have adjusted the amount of vegetables in the recipe as well.

- Spray w/oil.
- Add ground beef, onions. celery, red pepper and garlic.
- Saute` until beef is no longer pink and veggies are tender, about 10 minutes.

- In a large dutch oven, heat the olive oil.
- Add onions& garlic and cook until just beginning to brown.
- Add Pork and cook until browned on all sides.

ITALIAN SAUSAGE SPAGHETTI
This is my favorite method of making Italian sausage spaghetti. By browning the sausages first and then cooking them in the sauce at a long, slow simmer, the sausage is loaded with flavor and firm, but tender--almost meatball-like in texture. And we hardly need any seasonings because the long cook time allows the sauce to get infused with all the sausage-y goodness!

- Heat olive oil in a saucepan over medium heat. Transfer sausage links into the hot pot. Cover with a lid and cook until beautifully browned and just barely cooked through, about 5 minutes per side. You can increase the heat a little if you like, but make sure the oil does not smoke. Turn off the heat and remove sausages to a plate to cool completely.
- While the sausages are cooling, add wine to the same pot over medium-high heat. As it comes up to a simmer, stir the caramelized bits on the bottom of a pan with a spoon or spatula. Simmer until it reduces by about half, 1 to 2 minutes.
- Add marinara sauce. Pour water into the jar of pasta sauce, seal, and shake to rinse out the jar. Pour that liquid into the pot and return to a simmer. Reduce heat to low.
- Slice each fully cooled sausage into 4 pieces. Transfer sausage and any accumulated juices into the simmering sauce. Stir and increase heat to just between low and medium-low. Cook at a gentle, steady simmer, stirring occasionally, for 1 hour. Taste and adjust seasonings. Skim about 1/2 of the fat from the surface, and continue to cook until reduced and thick, about 30 minutes longer.
- Meanwhile, bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost tender yet firm to the bite, 10 to 11 minutes. Drain spaghetti and transfer it directly into the pot of hot sauce. Mix until thoroughly combined. Cover with the lid and let sit for 1 minute so the pasta can absorb some of the sauce.
- Evenly divide pasta onto 4 plates and top each serving with 4 pieces sausage. Sprinkle with Parmigiano-Reggiano and parsley.

It's been a long time since I have made tomato sauce with meat, and this one transported me back to the first recipe I learned to make. I called it spaghetti sauce, and it was a simple tomato sauce with ground beef. It didn't taste that much different from this sauce, which has only a quarter pound of meat in it - but that is all it needs to have a rich flavor and a meaty texture. The mushroom base is a perfect stand-in for half the meat; you could double the amount for a vegetarian sauce.

- In a large, deep skillet or casserole heat olive oil over medium heat and add onion. Cook, stirring often, until tender, about 5 minutes, and add garlic.
