Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan, or two 7x3 inch loaf pans.
- Combine banana and sour cream. Set aside. In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and banana mixture. Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Spread the batter evenly into the prepared pan or pans.
- Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center of the bread comes out clean.

ZUCCHINI-PINEAPPLE BREAD

- Preheat the oven to 350 degrees F. Grease two 8 1/2-by-4 1/2-by-2 1/2-inch loaf pans with cooking spray.
- Combine the flour, baking soda, cinnamon, baking powder, salt, nutmeg and allspice in a small mixing bowl.
- Beat the sugar, eggs, oil and vanilla in a medium bowl until well combined. Mix in the zucchini and pineapple. Add to the dry ingredients and mix well. Stir in the raisins.
- Pour half the batter into each loaf pan. Bake, rotating the pans halfway through, until a toothpick inserted in the center comes out clean, about 50 minutes. Let the bread cool in the pans for 5 minutes, then carefully turn out the loaves to finish cooling on a wire rack.
BANANA CAKE WITH CREAM CHEESE FROSTING

- For the banana cake: Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
- In the bowl of an electric mixer, combine the butter, brown sugar and granulated sugar. Mix on medium-high speed until light and fluffy, about 5 minutes.
- Meanwhile, sift the flour, baking soda, baking powder, cinnamon and salt into a medium bowl. Set aside.
- Add the bananas to the butter mixture and mix until combined. Let the mixer do the work of mashing for you. Add the eggs one at a time and mix until well combined. Mix in the yogurt and vanilla. Turn the mixer to low and add the dry ingredients until just combined. Do not overmix.
- Pour the batter into the prepared cake pan. Bake until a cake tester or toothpick comes out clean, 45 to 50 minutes. Cool in the pan for 5 to 10 minutes, then turn onto a wire rack and cool completely.
- For the cream cheese frosting: Using the electric mixer on high speed, blend the cream cheese and butter until light and fluffy, 4 to 5 minutes. With the mixer on low, add the confectioners' sugar and then the vanilla.
- Spread the frosting on top of the cake. Decorate around the perimeter of the cake with raspberries, if desired.
HONEY OAT BANANA BREAD

- Preheat oven to 350. Spray 3 4 by 8 loaf pans with non-stick spray.
- Mash bananas in a small bowl. Set aside.
- Mix together flour, baking powder, baking soda and salt in a medium bowl. Set aside.
- In a large bowl, cream together margarine, crisco and sugars. Mix in eggs and vanilla.
- Slowly add flour mixture. Mix in 2 1/4 cups of oats by hand.
- Pour half of the batter into the pans. Drizzle half of the honey over batter. Top with remaining batter. Sprinkle 1/4 cups of oats on each pan. Drizzle with remaining honey.
- Bake for 45-55 minutes. Cool on wire racks in pans for 15 minutes. Remove from pans and cool completely on wire racks.
BANANA OAT BREAD
The oats and nuts in this banana bread make it different and give it a great flavor and texture. It's one of my favorite quick breads, and I probably make it more frequently than any other! Don't forget to sprinkle the oats on top for a great crunch! This recipe came from Shanna at the IBS message boards at www.helpforibs.com, although I modified it slightly.

- Combine flour, oats, sugars, baking soda, baking powder, cinnamon, and salt; mix well.
- In another bowl, combine mashed bananas, oil, applesauce, eggs, and vanilla; mix well.
- Add wet ingredients to dry ingredients until well combined.
- Mix in chopped nuts.
- Pour into 9 x 5 loaf pan thinly coated with cooking spray.
- Sprinkle a thin layer of quick oats on top of the batter.
- Cook at 350 degrees for 1 hour or until a cooking skewer or knife inserted in center comes out clean.
- Allow to cool for at least an hour before cutting.

- Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
- Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.
- Cool in tin on a wire rack. Eat warm or at room temperature, with low-fat spread.
