Steps:

  • Combine butter, 1/2 cup sugar, vanilla extract, and salt in the mixing bowl of a stand mixer; mix ingredients thoroughly with a paddle attachment. Mix flour into butter mixture to make a smooth dough. Press dough into a 9-inch tart pan; refrigerate crust for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake crust until light golden brown, 15 to 20 minutes.
  • Whisk sugar, eggs, lemon zest, lemon juice, and 1/2 cup flour in a bowl until smooth. Pour lemon filling into crust. Cover edges of crust with strips of aluminum foil to prevent burning.
  • Bake tart until filling is set, about 20 minutes. Cool completely and dust with confectioners' sugar.

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking pan.

Steps:

  • To make the pastry, mix the flour and icing sugar in a bowl. Rub the butter into the flour with your fingers until crumbly. Mix in the egg yolks. If the pastry is still too dry, add 1-2 tbsp water until it comes together. Roll into a ball and divide in half (freeze one half for another recipe). Flatten out the pastry with your hands, wrap the dough in cling film, then chill for at least 30 mins. While the pastry is chilling, make the filling. Beat all the ingredients, except for the zest, together. Sieve the mixture, then stir in the zest.
  • Roll out the pastry on a lightly floured surface to about the thickness of a £1 coin, then lift into a 23cm tart tin. Press down gently on the bottom and sides, then trim off any excess pastry. Stab a few holes in the bottom with a fork and put back in the fridge for 30 mins.
  • Heat oven to 160C/140C fan/gas 3. Line the tart with foil and fill with rice or dried beans. Bake for 10 mins, then remove the tart tin from the oven, discard the foil, and bake for another 20 mins until biscuity. When the pastry is ready, remove it from the oven, pour in the lemon mixture and bake again for 30-35 mins until just set. Leave to cool, then remove the tart from the tin and serve at room temperature or chilled.

  • Crush biscuits to coarse crumbs either in processor or in a bag with rolling pin; mix with melted butter.
  • Press into a 20cm loose bottomed tin; chill until firm, about 10 minute.

Easy Peasy 'tart' Lemon Tart image

  • A. Pastry:
  • Combine flour, cornstarch, sugar, and salt by pulsing in a food processor or stirring in a large bowl.
  • Add cubed butter and process or use a pastry blender to cut in until crumbly. With the motor running add ice water and process just until it comes together. Alternately, drizzle flour mixture with water and stir with a fork until it becomes a ragged dough. Bring together and shape into a disk.
  • Wrap dough in plastic wrap and refrigerate for 15 minutes.
  • Press into a 9-inch (23 cm) flan pan, and refrigerate for 15 minutes.

  • Heat the lemon juice and zest in a small saucepan over medium-high heat until just boiling. Remove from the heat.
  • Whisk the eggs, sugar and salt together in a medium saucepan until well combined. Slowly drizzle the eggs into the lemon mixture, whisking constantly.

The Chef's Favorite Lemon Tart image

Steps:

  • In a food processor, pulse together the flour, sugar, and salt. Add the butter and pulse until the mixture resembles coarse meal. Add the egg yolk mixture and pulse just until the dough can be gathered into a ball. Flatten into a 6-inch disc, wrap in plastic, and chill several hours or overnight. Let the dough soften slightly at room temperature before rolling.
  • On a lightly floured surface, roll the dough into a 13-inch round. Fit the dough into a 10 1/2-inch tart pan with a removable bottom. Trim the dough flush with the rim and freeze the tart shell until firm. Meanwhile, preheat oven to 350 degrees.
  • Line the shell with foil or parchment, and fill with pie weights, rice or dried beans. Bake for 20 minutes until set. Remove the foil and weights and bake an additional 10 to 15 minutes, until lightly golden. Remove the shell from the oven and immediately brush the hot pastry with the egg white.
  • When the pastry is almost done baking, assemble the filling. Whisk together the eggs, sugar, orange juice, lemon juice, lemon zest, orange zest and cream until smooth. Transfer the tart shell to a preheated 350 degree oven. Place the filling in a pitcher and slowly pour into the shell as high as possible without overfilling. There might be a bit of filling left over.

  • Position a rack in the middle of the oven and preheat the oven to 350-degrees.
  • Have ready an 11-inch tart pan with a removable bottom.
  • Melt the butter in a small saucepan over medium heat, add 1 Tablespoon of the zest, and let stand for 5 minutes.
  • Whisk together the flour, 1/4 cup of the granulated sugar, and a pinch of salt in a medium bowl.

  • Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in cold water.
  • Refrigerate 20 to 30 min. or until slightly thickened.
  • Blend yogurt in blender until creamy. Gradually add gelatin mixture through feed tube at top of blender, blending well after each addition. Pour into large bowl. Add lemon zest and 1 cup COOL WHIP; stir gently until blended.
  • Stand cookies, filling sides down, around inside rim of 9-inch springform pan sprayed with cooking spray. Fill with gelatin mixture.
  • Refrigerate 2 hours or until firm.
  • Top with raspberries and remaining COOL WHIP just before serving.

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Grease and lightly flour a springform pan and set aside.
  • Combine flour, butter, and eggs in a food processor and pulse until a soft pastry ball forms. The dough will be pretty soft and hard to roll out. Take small portions of dough and flatten between your palms. Cover the base and sides of the springform pan until fully covered. Prick all over with a fork.
  • Bake in the preheated oven until lightly golden, 20 to 25 minutes. Remove pastry from the oven and allow to cool completely.
  • Combine water, sugar, lemon juice, lemon zest, egg yolks, cornstarch, and butter in a large bowl. Beat with an electric mixer until cornstarch and sugar are dissolved. Pour mixture into a small saucepan.
  • Cook over medium heat, stirring constantly, until cream thickens and starts to bubble, about 10 minutes. Remove from heat and pour into the cooled pastry shell. Spread out evenly and chill in the refrigerator until set, about 3 hours.
  • Once custard has set, top with fresh berries and lightly dust with powdered sugar.
