Steps:
- Heat the oil at a medium to high heat.
- Then add green onions and saute for a couple of minutes.
- Add the rest of the ingredients to the pot, bring to a boil and simmer until beans are cooked.
- Let cool.
- You could eat them like that or add a yogurt-garlic sauce to it.
- My family just loves this dish.
- Serve with rice and you have a full meal!

- Combine all the ingredients into one bowl and mix well.
- Scoop and serve.
GIGANTES (GREEK LIMA BEANS)
This is a family recipe. In Greek, it's called 'Gigantes' which translates as 'Giants.' Try to find the largest dried lima beans possible. My aunt adds small canned sausages, but I prefer this meatless. Serve with feta cheese and a crusty bread. You can also substitute 2 teaspoons parsley for the dill if you prefer.

Steps:
- Place the lima beans in a large saucepan. Pour enough water to fill to 2 inches above top of the beans. Allow to soak overnight.
- Preheat oven to 375 degrees F (190 degrees C).
- Place the saucepan over medium heat; bring to a boil; reduce heat to medium-low and simmer 20 minutes; drain. Pour the beans into a 9 x 13 baking dish. Add the tomatoes, olive oil, garlic, salt, and dill; stir.
- Bake in preheated oven for 1 1/2 to 2 hours, stirring occasionally and adding water if the mixture appears dry.

HEART HEALTHY LIMA BEAN PESTO & PASTA
Pesto lovers check this out! A cholesterol-lowering fiber and protein filled pesto. Arugula gives this pesto a nice bite if you want more of a kick go ahead and add the optional sriracha sauce. The Lima beans, cheeses and olive oil gives this a butter texture and protein. The lima beans replace the nuts in pesto's. You can do 1/2 arugula and 1/2 basil for more of a bite! BUT be sure to use tender baby arugula for it is raw in this recipe. The older the tougher and stronger it gets.The cook time is for the pasta. Mine was 8 minutes but cook according to package directions.

- Into a running food processor place lima beans and garlic add arugula, basil and cheeses. Pulse to blend.
- Slowly add oil through feed tube to make a nice paste.
- Season with salt and sriracha sauce to your heat level.
- Toss on to hot cooked cavatappi pasta.
- Sprinkle with grated cheese and watch it disappear.

- Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. , Place beans in a large saucepan; add bay leaves and water to cover by 2 in. Bring to a boil. Reduce heat; simmer, covered, until beans are tender, 1-1/4 to 1-1/2 hours. Drain., In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add next 6 ingredients. Stir in drained beans and remaining oil; toss to combine. Sprinkle with additional parsley.

LIMA BEANS IN OLIVE SAUCE

- Drain the beans in a colander and combine them in a large saucepan with the water. Bring up to the boil, then reduce the heat so that the water is simmering. Cook the beans, covered, for 35 to 40 minutes, or until just tender. Drain and set aside. In a bowl, combine the roasted chiles and the ginger with 3/4 cup of hot water and let soak for 15 minutes. Transfer the chiles and ginger with their water to a blender and blend until smooth. Set the mixture aside. Again in the blender, combine the pitted olives with about 1/2 cup of water, or just enough to make them move through the blades, and blend until completely smooth. Set this mixture aside. In a large heavy casserole, heat the olive oil over medium heat. Stir in the garlic, then immediately add the chile-ginger mixture. Cook for 10 minutes, stirring occasionally, until most of the liquid has evaporated. Add the pureed olive mixture, reduce the heat to low, and cook for 5 minutes, stirring occasionally. Add the beans and continue cooking for 15 to 20 minutes, stirring gently every few minutes.
- Remove from the heat, and let cool to room temperature. When the beans are cool, drain the spring onion and celery julienne and, in a small bowl, toss them with salt, pepper, and lemon juice. Serve the beans garnished with the crisp julienne.
- Note: To roast ancho chiles, first wipe them clean and remove the stems and seeds. Place the chiles over a gas burner and toast them all over until the skin is slightly bubbly and the flesh is softened. Don't let them char.
OLIVE SAUCE
Steps:
- Heat olive oil gently. Over very low heat, cook garlic and anchovies until it becomes paste like. Stir in olives and broth and bring to a simmer. Stir in cooked pasta and as you are stirring, toss with parsley and walnuts.
