CILANTRO LIME FISH
This is a good one for those of us who love lime, since that is the predominant flavor here. Use cod, flounder, or any firm white fish for this. I used Tilapia, and in place of the dried onion I used fresh. I served it with Recipe #120719. From Taste of Home's Quick Cooking (September/October 1999).

Steps:
- Preheat oven to 375°F.
- Place each fillet on a piece of heavy-duty foil; sprinkle with pepper.
- In a saucepan, saute onion and garlic in oil; stir in cumin.
- Spoon over fillets; sprinkle with cilantro.
- Place lime slices over each; drizzle with margarine.
- Fold foil around fish and seal tightly; place on a baking sheet.
- Bake for 35-40 minutes or until fish flakes easily with a fork.
CILANTRO LIME SALMON

- Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. Add the fish to the skillet and cook for 3 to 4 minutes per side, depending on the thickness of the fish and the degree of doneness you like. Remove from the skillet and keep warm.
- Return the skillet to medium heat and add the honey, soy, remaining 2 tablespoons butter and half of the lime zest and juice. Cook, stirring, until the butter melts and starts to bubble. Cook for a minute until the sauce thickens a little. Add the salmon and spoon over the sauce. Cook for another minute, basting as you go. Sprinkle generously with the cilantro.
- Stir the remaining lime juice and zest into the cooked rice. Serve the salmon with the rice, extra sauce and lime wedges on the side.
CILANTRO-LIME MARINADE
I actually made this up while trying to imitate a lime salad dressing I had tasted. It makes enough to marinate 4 boneless chicken breasts. Great for fajitas!

SEAFOOD STARTER IN A LIME, CILANTRO, SOUR CREAM SAUCE
This is really a unique and completely different approach for seafood. I had a dish similar to this in the Caribbean several years ago and loved it. Since then I re-created and I have made it for dinner parties many times but not as the main dish as I thought it was too rich. I like to serve mine in smaller serving bowls as an appetizer. Just a bite or two of the fish and shrimp with the toasted baguettes makes this a great starter dish. It is completely unique, but I think you will enjoy it.

- Marinade -- In a large bowl, add the salt, onions, lime juice, fish and shrimp and let marinade about 10-15 minutes, no more. The lime juice will actually start to cook the fish. Drain well. Reserve the onions.
- Saute -- In a large saute pan, add 2 tablespoons butter and melt on medium high, then add the garlic and cook 1 minute until the garlic starts to brown. Now, pick out the fish and shrimp from the marinade and add to the saute pan with the garlic and cook 2-3 minutes until lightly brown, just a couple of minutes, don't over cook. Remove to a platter and cover with foil.
- Sauce -- Now, to that same saute pan, add the wine to deglaze and cook 1 minute on medium high until it slightly reduces. Next, add the onions that you reserved along with the remaining butter and cook another 5 minutes until slightly soft on medium. Then reduce to medium low and add in sour cream, cilantro, pepper and chili powder (use as much chili powder as you like to taste). Don't let it come to a boil, as sour cream will curdle.
- Finish -- Add the fish and shrimp back in and cook just to reheat, 1-2 minutes is all.
- Serve -- In a small salad bowl with a couple of slices of toasted baguettes, add some of the shrimp and fish sauce and garnish with a squeezed lime wedge. Very simple and very good.
- To me this is just a nice starter to a dinner. A little seafood in a rich sauce with the baguettes just makes this really unique. Some roasted citrus chicken, Caribbean style rice, fresh fruits would be a perfect compliment to this starter.

EASY FISH TACOS WITH CILANTRO-LIME DRESSING
Easy fish tacos, grilled with an awesome marinade and great cilantro lime dressing. Use Asian slaw (from Wegmans), fresh salsa, and avocado to dress.

- Combine oil, vinegar, lime juice, lime zest, honey, garlic, seafood seasoning, cumin, chili powder, and black pepper in a nonreactive bowl or large resealable zip-top bag. Add mahi mahi and marinate for 8 hours, or overnight.
- At the same time, combine yogurt, lime juice, and cilantro for dressing in a bowl. Chill overnight while fish marinates.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove mahi mahi from marinade and place on a grill pan; discard excess marinade. Cook until fish flakes easily with a fork, turning as needed, about 5 minutes.

LIME-MARINATED MAHI MAHI
Steps:
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Whisk the extra-virgin olive oil, minced garlic, black pepper, cayenne pepper, salt, lime juice, and grated lime zest together in a bowl to make the marinade.
- Place the mahi mahi fillets in the marinade and turn to coat; allow to marinate at least 15 minutes.
- Cook on the preheated grill until the fish flakes easily with a fork and is lightly browned, 3 to 4 minutes per side.
- Garnish with the twists of lime zest to serve.

- To prepare the marinade: Combine soy sauce, sesame oil, ginger, garlic and pepper flakes.
- Place fish in a glass dish and add marinade.
- Marinate in refrigerator 2 hours, turning fish over after 1 hour.
- To prepare the sauce: In a medium saucepan combine the wine, stock or juice and vinegar.
- Boil until syrupy. You will have no more than a few tablespoons left.
- Set aside.
- In a food processor combine the garlic, ginger, cilantro, lime zest and juice, butter, red pepper flakes, salt and pepper; process until smooth.
- Set aside.
- Remove the fish from the marinade, scraping off the ginger and garlic and discarding any leftover marinade.
- Place in a baking pan or on a broiling pan and bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until done.
- To finish sauce: Reheat wine reduction over medium heat.
- Slowly add pieces of cilantro butter, whisking until sauce is lightly thickened. Do not boil.
- Pour the sauce over the fish and serve.

BROILED SALMON WITH CILANTRO AND LIME
This is really delicious! I love the combination of the fresh cilantro, lime, and garlic. And to top it off, this recipe is lowfat!

- Place fish on plate.
- Combine cilantro, garlic, lime juice, oil and salt in a bowl.
- Set 2 tablespoons aside in a separate bowl.
- Pour the cilantro mixture over the fish (do not use the 2 Tbsp reserved marinade).
- Cover and let it sit 10 minutes.
- Spray broiler rack with nonstick cooking spray.
- Place salmon on rack and brush with 1 tablespoon marinade.
- Broil 6" from heat about 3-4 minutes.
- Turn steaks over and brush with remaining tablespoon of marinade.
- Broil 3 more minutes or until cooked through.
- Note: I have used two very thick salmon steaks instead of the four 3/4 inch thick ones that the recipe calls for, and I have used the same amount of marinade.
- However, since thicker steaks will take longer to cook, the marinade can burn.
- To compensate for this, I add a little bit of marinade at a time.
- For example, if the salmon steaks are 1- 1 1/2 inch thick or more, they can take around 10 minutes to cook.
- So I brush the salmon steaks with less marinade, around 1/2 tablespoon.
- I then remove them from the broiler after 2 1/2- 3 minutes, and add a little more marinade, reserving enough for two more applications.
- Then I broil for another 2 1/2 minutes.
- I then turn the salmon over and add more marinade, still reserving a little.
- I broil another 2 1/2 minutes.
- I then add the remaining marinade and broil the remaining 2 1/2 minutes or until cooked through.
- This may seem tiresome, but it's well worth it.
- The marinade is great and you definitely don't want it to burn!

- Marinade:.
- Combine garlic, cilantro, fish sauce, soy sauce, sugar, salt, pepper, and oil in a food processor or blender and grind to a smooth paste. Transfer to a large zip-lock bag and add fish fillets. Turn gently to season well. Set aside for 30 minutes, or refrigerate up to 1 day.
- Sauce: Combine sauce ingredients in a small bowl, stirring to dissolve sugar. Sprinle with chili and cilantro and set aside.

- Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
- For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.
