Steps:
- In a large saucepan, combine sugar and water. Boil for 5 minutes. Remove from heat, and add cinnamon sticks, allspice berries, cloves, and ginger. Cover and let stand in warm place for 1 hour.n
- Strain liquid into a large pot. Just before serving, add juices and cider and quickly bring to boil. Remove from heat and serve.n

WASSAIL RECIPE (PERFECT CHRISTMAS MORNING DRINK) - SALT & BAKER
Instructions. In a large pot over medium heat, stir the sugar and water. Bring to a boil and boil for 5 minutes, stirring frequently. Remove from heat. Add the cinnamon stick, allspice berries, cloves, and ginger. Cover and let sit for 1 hour. Strain the mixture. Stir in the orange juice, lemon juice, and apple cider.

Way too sour!! I steeped the water, sugar and spices together for an hour, then added rest of ingredients into a crock pot. It smelled good, but the taste is way off. I would not add any lemon juice (or just a 1/2 cup) if I make again. I ended up taking out 4 cups of the liquid and replacing it with 4 cups of warmed apple cider. It was still just OK and company didn't drink much.

I love wassail during the holidays! This one is very good, and has no sugar. The original Lion House recipe calls for 2 1/4 C sugar. I changed this to 1 cup agave nectar which made it plenty sweet and cut out about 775 calories to the batch. Another idea is to use Stevia. Stevia has no calories and is derived from the sweet Stevia leaf.

I made this and the only change was letting the spice bag steep after adding the juices. Be sure to remove the bag after about a quarter of the wassail is consumed, or the spices become overwhelming. (We fixed it by adding more apple and lemon juice.) It was so well liked at Christmas Eve I made it again for New Year's.
