Steps:

  • Combine all of the dry ingredients. Beat eggs with oil and add to flour mixture. Add mangoes, lemon and raisins.
  • Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees F -175 degrees C (325 degrees F for glass pans) for about 60 minutes or until toothpick comes out clean.

Steps:

  • Whisk the mango pulp, sugar, lemon juice, cornstarch and salt in a medium saucepan. Whisk in the egg yolks.
  • Cook the mixture over medium heat, whisking constantly, until it¿s thick like pudding, 5 to 7 minutes. Remove from the heat and whisk in the butter a few pieces at a time until incorporated.
  • Strain the mixture through a fine-mesh sieve into a small bowl, pushing it through with a rubber spatula. Press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate until completely set, at least 4 hours and up to 5 days.
  • Choose your fruit and mix up the ultimate spread.

Steps:

  • Preheat your oven to 350 degrees F.
  • Grease a 9 x 5 inch loaf pan.
  • In a mixing bowl, combine the flour, baking soda, cinnamon and salt. Form a well in the center of the mixture and add the sugar, eggs, macadamia nuts, walnuts and the oil. Add mango and slowly incorporate into the flour mixture.
  • Pour this mixture into the prepared loaf pan and bake for about 45 minutes, or until a knife inserted into the center comes out clean.
  • Let cool. Slice and eat!

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, sift together flour, baking soda, salt and cinnamon. In a large bowl, beat together the butter, oil and sugar until light and fluffy. Steps:

  • Combine the mangoes, lemon juice, and 2 tablespoons sugar in a nonreactive bowl; let sit for 2 hours. Puree in a food processor; strain to remove any fibers.
  • Using a mixer at high speed, beat egg and egg yolks until light and fluffy. Gradually add the remaining sugar, then lower the speed and add the milk, cream, and mango puree until well mixed. Chill, then pour into an ice-cream maker; freeze according to manufacturer's instructions.

Maddog's Mango Coconut Bread image

Steps:

  • Preheat oven to 350 degrees. Spray two (8-by-4-by-21/2-inch) loaf pans well with no-stick cooking spray. Set aside.
  • In a large mixing bowl, cream butter and sugar together until light using an electric mixer on medium speed. Add eggs one at a time, beating well after each addition. On low speed of mixer, beat in flour and nutmeg. Fold in mangoes and coconut.
  • Divide batter between prepared pans and bake in center of oven about an hour or until center of each loaf is set. If edges seem to be getting too brown, cover them lightly with foil the last few minutes of baking.
  • Let sit in pans about 8 minutes, then turn out onto wire racks to cool. Best if completely cool before slicing. Slices even better from refrigerator. Makes 2 loaves; 16 slices ea.

Mango Tea Bread image

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter and flour 9x5x3-inch metal loaf pan. Mix raisins and brandy in small bowl. Let stand 15 minutes.
  • Puree mangoes in processor until smooth. Measure 1 cup puree for bread (reserve remainder for another use).
  • Combine flour, baking soda, cinnamon, salt, ginger, and nutmeg in medium bowl; whisk to blend. Using electric mixer, beat sugar and butter in large bowl until fluffy. Beat in eggs, 1 at a time, then vanilla and 1 cup mango puree. Gradually add dry ingredients, beating just until blended. Fold in raisins and brandy. Pour batter into prepared pan.
  • Bake bread until tester inserted into center comes out clean, about 1 hour 15 minutes. Cool 20 minutes in pan on rack. Turn bread out; cool completely. (Can be made 3 days ahead. Wrap bread in foil and store at room temperature.)
