  • In a large saucepan, heat oil over medium heat. Add onion; cook and stir until softened, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes, Italian seasoning, salt, pepper and sugar; bring to a boil. Reduce heat; simmer, covered, 10 minutes.

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).

Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Never spend money on store shelf sauce again! An upgrade from Recipe #394646, I like to use this as my main pasta sauce as it has the consistency and taste I really like but without icky tomato chunks: it's cheap and easy to make! And being animal-product-free, also vegan. I like it way better than jarred; and it's easy to jar too and has a long fridge life. For Italian seasoning I used Recipe #391627 and there are some other good ones on here, but storebought is good too. This is perfect for all household sizes but especially singles/small households because it doesn't yield a ton. (But if you need more, it is easy to double and triple.)

Steps:

  • In a saucepan, saute the onions, but do not let them brown.
  • To the saucepan, add the liquid drained from the diced tomatoes. Add the basil, Italian seasonings, sugar (or sugar substitute) and crushed red peppers. Simmer liquid and spices for about 30 minutes or until liquid is reduced by half.
  • Add the diced tomatoes and crushed tomatoes and cook just until heated, about 1 minute.
  • If you prefer, you can used whole tomatoes and dice them, saving any tomato liquid for Step 2.
