- In a large skillet, combine the first seven ingredients. Stir in meat mixture. Bring to a boil., Transfer to a greased 13x9-in. baking dish. Top with Tater Tots. Cover and bake at 350° for 30 minutes. Sprinkle with cheese and green onions. Bake, uncovered, 10-15 minutes longer or until bubbly and cheese is melted.

Made my own creation after reviewing numerous recipes for Tater Tot® casserole. My fiance loves it! Garnish with sour cream and lettuce.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
- Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. Mix ground beef and taco sauce together in a separate bowl; add to the corn mixture in the dish and stir together. Layer potato puffs on top of casserole. Top with shredded Mexican cheese blend.
- Bake in the preheated oven until beef is no longer pink, about 25 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil casserole until top is golden brown, about 5 minutes.

MEXICAN BEEF TATER TOT™ PIE

- Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
- In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. Return beef mixture to pan; add taco seasoning mix and water. Cook and stir over medium-high heat 1 to 2 minutes or until well mixed. Remove from heat. Cool 2 minutes.
- Meanwhile, in large bowl, mix milk and egg. Stir in cheese. Stir beef mixture into egg mixture, then pour into pie plate. Spread evenly.
- Top beef mixture with Tater Tots™. Bake 37 to 39 minutes or until mixture is set and Tater Tots™ are browned. Cool 10 minutes. Top with fresh toppings, as desired.

Stir in salt and pepper. , Spoon mixture into a greased 3-qt. baking dish. Spread with soup. Top with frozen potatoes. Bake for 40 minutes or until bubbly. Sprinkle with cheese. Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potato nuggets in the bottom of a glass baking dish. Bake in the preheated oven until cooked through and crisp, about 20 minutes.
- Cook ground beef in a large skillet over medium heat until no longer pink, 10 to 12 minutes. Drain off fat and discard. Stir in taco seasoning and water. Reduce heat to low and simmer until sauce is reduced and thick, about 10 minutes.
- Spoon cooked beef mixture over the potato nuggets. Pour nacho cheese dip evenly over the beef. Top with canned tomatoes, olives, 1/2 cup shredded Cheddar cheese, and taco sauce. Bake in the oven until cheese is melted and the casserole is warmed through, about 10 minutes. Remove from oven and top with 1/2 cup shredded Cheddar cheese. - Brown meat and onion; drain. Mix in sauce, olives, and seasonings. Heat through. Spread in 13x9-inch pan.
- Cover meat with corn, and cover corn with cheese.
- Place tater tots evenly over casserole until it is completely covered.
- Bake according to tater tots package, stopping halfway through to "turn" tater tots (otherwise the bottoms may still be cold).

- In a Dutch oven cook the beef, onion, pepper and celery over medium heat until meat is no longer pink; drain if necessary. Stir in spices such as salt, pepper, cajun seasoning, chili powder, and cumin. Stir in creamed corn, cream of mushroom soup,oregano and half of the cheese and bring to a boil.
- Transfer to a greased baking dish and top with tater tots. Cover and bake at 350 F degrees for 30 minutes. Sprinkle with remaining cheese and bake for another 15 minutes or until slightly golden brown. Top with chopped tomatoes and green onions and serve.
