PERFECT MICROWAVE OATMEAL FOR ONE

I used to fix myself hot oatmeal every day, even when I was working. I guess I'm lazier now, and not willing to clean that pot day after day. SO, after much trial and error, I figured out how to do it right in the ce4ereal bowl, in the microwave. Pre-loading single servings -- everything but the water -- into snack-size zip bags make this an even quicker way to have my oatmeal any day I want it.

Perfect Microwave Oatmeal for One image

Steps:

  • Put everything into a microwave safe bowl. You need one deep enough to avoid boil-over messes.
  • Microwave on HIGH for 2 minutes.
  • Stir and eat with a little milk and a sliced half banana. Yum!

1/2 cup old-fashioned oatmeal
5 ounces water
1 tablespoon raisins (or other dried fruit)
1 tablespoon walnut pieces (or other nuts)
1 -2 dash salt
1/8 teaspoon cinnamon

Beat in vanilla and oat mixture. Combine dry ingredients; gradually add to oat mixture until combined., Pour into a greased 11x7-in. microwave-safe dish. Shield corners with small triangles of foil. Microwave, uncovered, at 50% power for 6 minutes. Cook on high for 6 minutes or until when center is touched, cake clings to finger while area underneath is almost dry. Place on a wire rack to cool., Combine topping ingredients in a microwave-safe dish; microwave, uncovered, on high for 4-5 minutes or until thicken and bubbly, stirring every 2 minutes. Steps:

  • Mix all ingredients but the chocolate chips in a bowl and beat 3 minutes on medium speed.
  • Stir in 1 cup chocolate chips.
  • Spread the batter into an 8 inch glass dish (or other microwave dish).
  • Cover with waxed paper.
  • Microwave at high for 8 to 9 minutes or until the top looks dry.
  • If you don't have a part that rotates the dish then you need to rotate the dish a 1/4 turn after 4 minutes.
  • Take the dish out of the microwave, take off the waxed paper, and sprinkle the rest of the chips on the top of the cake.
  • Let them stand for 5-10 minutes or until they are melted.
  • Spread them over the top of the cake.
  • Let it cool and then cut it into squares.

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray. Line the bottom of the pan with parchment and coat again with the spray.
  • Whisk together the flour, oats, granulated sugar, brown sugar, cinnamon, baking powder, salt and baking soda in a large bowl and set aside. Whisk together the oil, buttermilk, vanilla and eggs in a medium bowl. Fold the buttermilk mixture into the flour mixture until just combined.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes.
  • For the glaze: Meanwhile, add the brown sugar, oats, coconut, butter, milk, cinnamon and salt to a small saucepan over high heat. Bring to a boil and cook until the butter and sugar are dissolved, about 1 minute. Turn off the heat and stir in the pecans.
  • Pour the hot glaze over the warm cake and spread evenly. Let the cake cool in the pan on a rack until cooled completely, at least 40 minutes. The glaze will still look glossy but should be not be sticky. You can cut slices from the pan or invert onto a serving platter or cutting board. Store at room temperature for up to 1 week.

  • For the cake: Combine the milk, chia seeds, vanilla, egg yolk and banana in a small microwave-proof jar or container (I prefer half-pint Mason jars). Add the flour and baking powder and stir until well incorporated and the batter thickens. Store in the fridge until ready to serve.
  • Microwave the jar on high for 1 to 1 1/2 minutes, then serve.
  • For the peanut butter cake: To the cake recipe, add the peanut butter and 1/2 teaspoon cinnamon and give everything a good stir. Once the cake is microwaved, drizzle some honey and sprinkle more cinnamon, if desired.
