OLD FASHIONED MILK PIE
My son-in-law has been trying to replicate (for years) a childhood favorite his mother made -- milk pie! We all laughed and teased him until I found this delicious version which I'm sure is destined to become a family tradition.

Steps:
- Mix sugar, flour and salt in pie shell with your finger.
- Add the cream.
- Finish filling crust with milk.
- Sprinkle with nutmeg (or cinnamon).
- Bake at 400°F for 15 minutes, then 350°F for 40 minutes.

Steps:
- In small bowl, combine the cornstarch, sugar, and salt.
- Put milk into medium heavy-based saucepan, and whisk in egg and cornstarch mix.
- Cook over medium heat, whisking constantly; 10-17 minutes.
- DO NOT BOIL!
- Reduce heat to low if necessary to prevent burning!
- After finished cooking, remove from heat and whisk in extracts.
- Cool to lukewarm and pour into baked pie crust.
- Refrigerate pie until set-- approximately 3-4 hours.
- Before you serve the milk pie, sprinkle cinnamon sugar over the top of it.
GALAKTOBOUREKO: MILK PIE
Steps:
- In a heavy pot, bring the milk to a boil. Sprinkle in the semolina, whisking constantly over very low heat. Add the sugar, then simmer for 5 to 6 minutes, stirring from time to time. Remove from the heat and add the butter and the eggs, 1 by 1, stirring. Blend in the vanilla. The mixture will be thick but pourable, like a sauce.
- Preheat the oven to 375 degrees F.
- Butter a deep 10-inch baking pan. In the bottom of the pan, layer 8 sheets of phyllo, leaving the edges hanging over the sides of the pan. Brush each sheet generously with clarified butter. Pour the milk mixture over the phyllo layers.
- Cut the remaining sheets of phyllo about the size of the pan and brush each sheet with clarified butter. Place the buttered sheets on top of the filling, then brush the hanging bottom sheets with clarified butter and roll them up to seal.
- With a very sharp knife, score the top diagonally in 2 directions to make diamond-shaped slits on the surface. (This makes it easier to cut later, and also allows the syrup to penetrate the pie.) Sprinkle with a little water and bake about 1 hour, or until top is light brown and filling has set.
- The minute you start baking the pie, begin to make the syrup. Simmer the water with sugar and the 1/2 of lemon for about 1 hour. Remove the lemon half and squeeze the juice into the syrup. Discard the lemon. Pour the syrup over the pie the minute you take it out of the oven. Be careful, syrup will bubble vigorously and can burn you.
- Let cool, and serve, cutting pieces along the slits that you made before baking the pie.
RUFFLED MILK PIE
The secret to this easy ruffled milk pie is store-bought phyllo dough, which gets sprinkled with cinnamon-sugar, shaped into roses and coated in a creamy, rich custard. This version is based on the Greek dessert galatopita and is reminiscent of the Egyptian dessert Mesh Om Ali, which was made TikTok-famous by @RamenaSaidWow's omnipresent "crinkle cake." The result tastes like a churro meets crème brûlée and could not be any more decadent and delicious.

- Position a rack in the lower third of the oven, place a baking sheet on the rack and preheat to 350 degrees F.
- Brush a 9 1/2-inch deep-dish pie plate (preferably with ruffled edges) with some of the melted butter. Stir together the cinnamon and 2 tablespoons plus 1 1/2 teaspoons of the sugar in a small bowl. Set aside.
- Place the sheets of phyllo on a baking sheet and cover with a barely damp kitchen towel or several paper towels to keep from drying out.
- Place 1 sheet of phyllo dough with a long side closest to you on a work surface. Brush the phyllo sheet with some of the melted butter until completely coated, then sprinkle with 3/4 teaspoon of the cinnamon-sugar. Using your hands, gently bring the long sides toward one another, scrunching the phyllo as you go to create a ruffled effect. Gently coil the phyllo into a rose shape about 3 1/2-inches in diameter. Place the phyllo rose in one corner of the pie plate. Repeat to make 3 more phyllo roses. Arrange them so they fill the bottom of the pie plate in a single layer. If the phyllo dough tears or breaks, it is okay since it will just add to the ruffled effect of the final pie. If there are any spaces between the phyllo roses, gently spread them with your hands until the roses cover the entire bottom of the pie plate.
- Brush the 8 remaining phyllo sheets with melted butter, sprinkle with cinnamon-sugar and shape into a slightly smaller rose (2 1/2 to 3-inches). Place 1 rose in the center of the pie plate on top of the first layer, then surround it with the remaining 7 roses. If there is any remaining melted butter, drizzle it on top of the roses.
- Bake on the preheated baking sheet until deep golden brown and crispy, 25 to 30 minutes, rotating the baking sheet once after 15 minutes. Allow to cool slightly on the baking sheet while you prepare the custard.
- Place the milk and cream in a medium saucepan over medium heat and cook, stirring occasionally, until it just starts to steam, 7 to 10 minutes. Remove from the heat. Whisk together the vanilla, salt, eggs and remaining 1/3 cup sugar in a large bowl. While whisking constantly, gradually add the milk and cream mixture a little bit at a time until smooth and combined.
- Pour or spoon the custard between the crispy phyllo layers; this will ensure that the phyllo on top stays nice and crispy. Bake until the filling is just set, 20 to 25 minutes, rotating the baking sheet after 10 minutes. Let cool on the baking sheet for 30 minutes. Sprinkle with the almonds if using and dust with confectioners' sugar.
- Cut into 8 wedges and serve warm.

- Preheat oven to 350 degrees. Brush a 14-inch round cake pan with some of the clarified butter; set aside.
- Place 1 sheet of phyllo dough on work surface with one long side parallel to edge of work surface. Using your hands, loosely ruffle phyllo by pushing short sides toward one another to create a long cylindrical shape. Place upright in center of prepared cake pan, creating a spiral. Repeat process with remaining sheets, continuing spiral outward until bottom of pan is covered.
- Using a pastry brush, brush remaining clarified butter all over phyllo in pan; sprinkle with 1/4 teaspoon cinnamon. Transfer to oven and bake until golden brown, 25 to 30 minutes.
- Meanwhile, heat milk in a medium saucepan until it just barely begins to boil; remove from heat. Whisk together eggs and sugar in a large bowl. Gradually add heated milk, a little bit at a time, whisking constantly; whisk in vanilla.
- Spoon milk mixture over baked phyllo, evenly covering surface. Return pan to oven and bake until filling has set, 25 to 30 minutes more. Dust with confectioners' sugar and cinnamon; serve immediately.
MILK FLITCHER PIE
This is a very old Pennsylvania Dutch treat, a sort of milk and sugar pie made usually for children, as a way to use up leftover pie dough. This makes an odd-looking pie, but it tastes better than it looks. I have heard this called many names, among them Slap Jack, Flippy, Shlop Boi, Flitche, Flabby, or even Stingy Pie!

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine the flour and sugar in the pie shell, and mix together using your fingers. Pour in milk, and again, mix with your fingers to avoid damaging the crust. Dribble in the molasses, and dot with butter. Sprinkle cinnamon over the top.

- Bring milk, 1/2 cup granulated sugar, and salt to a simmer in a 4-quart heavy saucepan. Whisk in semolina, a little at a time, and simmer, whisking constantly, until mixture is the consistency of loose mashed potatoes, about 4 minutes. Remove from heat. Whisk together yolks and vanilla in a large bowl until combined, then whisk in hot semolina mixture, a little at a time, to temper yolks. Cool, stirring occasionally, 15 minutes.
- Put oven rack in middle position and preheat oven to 375°F.
- Pulse nuts in a food processor with cinnamon and 2 tablespoons granulated sugar until finely chopped.
- Put phyllo sheets (in a stack) on a cutting board and trim with a sharp knife into a 13- by 9-inch stack. Cover phyllo with 2 overlapping sheets of plastic wrap and then a dampened kitchen towel.
- Brush a 13- by 9-inch baking pan with 1 tablespoon melted butter. Put 1 sheet of phyllo in pan (keep remaining sheets covered) and brush with butter, then sprinkle with a rounded teaspoon granulated sugar. - Beat whites in a bowl with an electric mixer at medium speed until they just hold stiff peaks. Stir one fourth of whites into semolina mixture to lighten, then fold in remaining whites gently but thoroughly.
- Spread egg mixture evenly over phyllo. Bake until filling is golden and puffed around edges, about 35 minutes. Cool pie in pan on a rack about 1 hour before cutting into squares. Serve warm or at room temperature, dusted with confectioners sugar.

- For oat cookie crust:
- Preheat oven to 350°F. Line 13 x 9 x 2-inch metal baking pan with parchment paper; coat with nonstick spray. Combine 6 tablespoons butter, 4 tablespoons brown sugar, and 2 tablespoons sugar in medium bowl. Using electric mixer, beat mixture until light and fluffy, occasionally scraping down sides of bowl, about 2 minutes. Add egg; beat until pale and fluffy. - For filling:
- Position rack in center of oven and preheat to 350°F. Whisk both sugars, milk powder, and salt in medium bowl to blend. Add melted butter and whisk until blended. Add cream, then egg yolks and vanilla and whisk until well blended. Pour filling into crust. Bake pie 30 minutes (filling may begin to bubble). Reduce oven temperature to 325°F. Continue to bake pie until filling is brown in spots and set around edges but center still moves slightly when pie dish is gently shaken, about 20 minutes longer. Cool pie 2 hours in pie dish on rack. Chill uncovered overnight. DO AHEAD: Can be made 2 days ahead. Cover; keep chilled.
- Sift powdered sugar lightly over top of pie. Cut pie into wedges and serve cold.
