CHOCOLATE HAZELNUT TARTUFO
My variation on a delicious dessert we experienced in Rome this spring. Called tartufo because it resembles a truffle.

Steps:
- Combine milk, cream, and 1/3 cup sugar in a medium saucepan over medium heat; stir until the sugar dissolves, about 3 to 5 minutes. In a separate bowl, beat egg yolks and 1/3 cup sugar until the egg yolks are light in color, about 4 minutes. Stir 1/2 cup of the milk mixture into the egg yolks, then pour all of the egg mixture into the saucepan, stirring continuously. Cook, stirring continuously, until mixture thickens enough to coat the back of a metal spoon, 8 to 10 minutes. Remove from heat.
- Add the chocolate hazelnut spread, espresso powder, and vanilla, stirring until well combined. Pour through a mesh strainer into a bowl. Refrigerate several hours until cold.
- Pour into an ice cream maker and freeze according to manufacturer's directions. Transfer gelato into an airtight container and place in freezer until solid.
- To make the tartufo: Scoop 4-ounce portions of gelato and form into balls using your hands. Poke a hole in each ball and place 1 cherry in each, cover with gelato, and place on a baking sheet. Roll gelato balls in the grated chocolate until coated and return to the freezer until ready to serve. Serve with whipped topping, if desired.

TARTUFO
Steps:
- Caramel sauce:
- In a heavy saucepan over medium-high heat, combine the sugar with 1/4 cup of water.
- Bring to a simmer and cook until the mixture turns a deep golden brown. Remove from the heat and carefully whisk in the heavy cream, vanilla extract and salt. Set aside to cool to room temperature.
- Tartufo:
- Combine the cookie crumbs and chocolate chunks in a large resealable bag.
- Using a large round ice cream scoop, scoop out a ball of ice cream and leave it in the scoop. Poke a hole in the center of the scoop with a handle of a wooden spoon and put a cherry into the hole. Cover the hole with a bit of ice cream and put the scoop of ice cream into the bag of cookies and chocolate pieces. Shake around pressing gently to completely coat the ice cream. Put the scoop on a tray and freeze for 30 minutes. Repeat the process with remaining ingredients.
- Before serving, divide the caramel sauce among 4 plates. Remove the Tartufos from the freezer and slice them in half. Arrange 2 halves on each plate and garnish with mint sprigs.
MOCHA TARTUFO
Coated with crunchy wafers, our mocha tartufo (Italian for truffle) ice cream balls have chocolate-covered espresso beans buried inside.

- Line a rimmed baking sheet with plastic wrap; place in freezer. Using a 1/4-cup ice cream scoop, make a slightly rounded ball of ice cream. Press your thumb into center to make an indentation, and fill it with 3 chocolate-covered espresso beans. From edges of indentation, spread and press ice cream over to seal; transfer ball to baking sheet in freezer. Repeat to make 18 ice cream balls in all. Freeze until hardened, 2 to 3 hours.
- Remove ice cream balls from freezer and allow to soften at room temperature for 3 to 5 minutes. (This will help the crushed wafers adhere in next step).
- Put crushed wafers in a shallow dish; roll ice cream balls in wafers, and pat to coat. Place tartufo on baking sheet, and freeze for at least 2 hours before serving.
MOCHA
This is a chocolate and coffee-lover's favorite! Using a home espresso machine, mix espresso, chocolate, and steamed milk--then top with whipped cream.

- Pour milk into a steaming pitcher and heat to 145 degrees F to 165 degrees F (65 to 70 degrees C) using the steaming wand. Measure the chocolate syrup into a large coffee mug. - Make around 35ml espresso using a coffee machine and pour into the base of your cup. Add the drinking chocolate and mix well until smooth.
- Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

- Preheat oven to 350°F.
- Line a 12-cup muffin tin with paper liners.
- In a small, microwave-safe bowl, melt together the butter and chopped dark chocolate. Heat in 30 second intervals, stirring frequently until smooth. Set aside to cool slightly.
- Dissolve espresso or coffee in hot water. Set aside.
- In a large mixing bowl, whisk together flour, sugar, baking powder and salt. Make a well in the center and add eggs, buttermilk, dissolved coffee, and vanilla extract or Kahlua .
- Stir till partially mixed, then stir in melted chocolate mixture until the batter is almost smooth then stir in the chocolate chunks and nuts if using, mixing just until everything is incorporated.
- Spoon batter into lined muffin cups 2/3 full. Bake for about 16-20 minutes, or until a tester inserted into the center comes out clean.
- Cool muffins before serving at room temperature or slightly warm.

- For hazelnut gelato, bring milk and cream to the simmer in a saucepan over medium-high heat. Meanwhile, whisk yolks and sugar in a heatproof bowl until pale. Gradually pour milk mixture over yolk mixture, whisking to combine, then return to pan and stir continuously over medium heat until mixture coats the back of a wooden spoon thickly (8-10 minutes). Place hazelnuts in a heatproof bowl. Pour milk mixture over hazelnuts and whisk to combine. Stir occasionally over ice until chilled (20-40 minutes), then refrigerate overnight for flavour to develop. Strain through a fine sieve (discard hazelnuts) and freeze in an ice-cream machine, then spoon into eight 300ml round-based moulds or small bowls to half-fill, pressing to remove air. Place a glacé cherry in the centre of each and freeze until required.
- Meanwhile, for mocha gelato, bring milk and cream to the boil in a saucepan over medium-high heat. Whisk yolks and sugar in a heatproof bowl until pale, then stir through chocolate, coffee and cocoa. Gradually pour milk mixture over yolk mixture and whisk until smooth. Return to pan and stir continuously over medium heat until mixture coats the back of a wooden spoon thickly (8-10 minutes). Transfer to a bowl placed over ice and stir occasionally until chilled (20-40 minutes). Freeze in an ice-cream machine (be careful not to over-churn or gelato will be grainy), then spoon into moulds over hazelnut gelato, pressing to remove air. Smooth tops and freeze until firm (at least 2 hours).
- Dip tartufo moulds briefly in hot water, then invert onto a tray lined with baking paper and freeze until firm (2-3 hours).
