There are so many benefits to increasing the fiber in your diet. Foods high in fiber help to soak up LDL cholesterol in the bloodstream, thus reducing the risk of arterial deposits and possible myocardial infarction. Studies show that fiber also helps to slow the absorption of sugar in the gut, which helps to stabilize blood-glucose levels, which is good for diabetics, those who suffer from insulin resistance and obesity. These muffins are a fairly painless way to add fiber to your diet--at least for non-diabetics. Probably too much sugar for a diabetic--sorry.

Steps:
- Prepare muffin tin by coating with with non-stick cooking spray.
- In a mixing bowl, add the bran cereal and milk; let stand for 5 minutes.
- Add in the molasses, oil, and egg; stir to blend.
- In another mixing bowl, mix together the flour, baking powder, baking soda, and salt.
- Add the liquid ingredients and raisins to the flour mixture; fold just until blended (do not overmix).
- Spoon batter into muffin tin (12).
- Bake in a 400° oven for 20-22 minutes or until edges begin to pull away from the sides and pick comes out clean.
- Cool on a wire rack before removing from the pan.

THE REAL BRAN MUFFINS
My girl friend gave this recipe to me over 20 years ago. It's no cupcake muffin, it really works! Molasses is the only sugar in this recipe.

- Combine all the dry ingredients.
- Mix these two mixes tog and add raisins at the end if you are including them.
- Do not over mix.

- Heat the oven to 400°F. Place a paper baking cup in each of 12 regular-size muffin cups, or spray just the bottoms of the cups with cooking spray.
- Place cereal in a resealable food-storage plastic bag; seal the bag. Roll over cereal with a rolling pin or bottle, or press with bottom of small saucepan, to crush cereal into fine crumbs.
- In a medium bowl, stir the crushed cereal, milk, raisins and vanilla until well mixed. Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork.
- In another medium bowl, stir the flour, brown sugar, baking powder, salt and cinnamon until well mixed. Stir flour mixture into cereal mixture just until flour is moistened (batter will be lumpy). Spoon the batter into the cups, dividing batter evenly.
- Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. If muffins were baked in a sprayed pan, leave in pan about 5 minutes, then remove from pan to a cooling rack. Serve warm if desired.
