- Place the carrots, lima beans and green beans in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 4-5 minutes or until crisp-tender, adding the cauliflower, broccoli, corn and peas during the last 2 minutes. Transfer to a large bowl; stir in onion., Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth; gradually add the cream and milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in the cream cheese, cheddar cheese, mozzarella cheese, parsley and seasonings; cook and stir until blended., Pour sauce over vegetables; gently toss to coat. - Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
- In a bowl, stir together the cream of celery soup, sour cream, Cheddar cheese, onion, and salt until well combined. Mix the green beans and corn together in the prepared dish, and spread the soup mixture over the vegetables. Place the crushed crackers in a bowl and stir in the butter. Spread the crumbs over the casserole.

VEGETABLE BAKE
This is a favorite of mine every Thanksgiving and Christmas. It was always a sure fire way to get me to eat more veggies.

Steps:
- Slice carrots diagonally (Circles on an angle) ¼ inch thick.
- Cut off broccoli stems and peel the steams smooth.
- Cut the stems into thick circles, slice large broccoli flowerettes in half lengthwise through steams.
- Break cauliflower into flowerettes - cut large ones lengthwise through steams.
- Arrange Carrots, broccoli steams and cauliflowerettes in a steamer and steam over boiling water for 9 minutes or until tender.
- For Sauce: Melt butter in a pan over medium heat, stir in flour and blend until smooth.
- Gradually add in the milk.
- Cook - stirring constantly until smoothly thickened.
- Stir in Mustard, Salt, Pepper, Cheese, and parsley.
- Pour half the sauce into a 3 Quart casserole dish.
- Add cooked vegetables; mix gently then top with remaining sauce and gently mix again.
- Cover and refrigerate until ready to bake.
- Topping: For topping combine all ingredients except parsley.
- Before baking - Sprinkle with topping and bake covered at 325º F for approximately 1 hour or until hot and bubbly in the center.
- Sprinkle with chopped parsley.

This is my mother's vegetable soup, slightly modified. I have left out the beef shank which is in the original recipe. Makes a heaping amount and gets better with time!

- Bring a large pot of lightly-salted water to a boil. Add the sliced carrots, and cook until just tender, about 3 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the carrots are cold, drain well, and place into a large glass or plastic bowl.
- Place the green pepper, onion, cucumber, celery, cauliflower, and broccoli into the bowl along with the carrot; set aside. In a separate bowl, whisk together the sugar, vinegar, Worcestershire sauce, black pepper, mustard, and salt until the sugar begins to dissolve. - Preheat the oven to 350ºF (180ºC). Line a 10-inch (25-cm) springform pan with parchment paper.
- Carefully slice the zucchini, potatoes, and carrots very thinly with a mandoline or a sharp knife. Watch your fingers!
- In a large bowl, combine the eggs, melted butter, and milk, and whisk until combined.
- Add the nutmeg, basil, thyme, salt, pepper, and flour, and whisk well.
- Add the sliced veggies to the batter and stir well until the slices are well-coated.
- Add half of the vegetables slices to the prepared pan and flatten with a spoon.
