A former student gave me this recipe. He made it for lab one day and everyone thought they were awesome. I've made them since and gotten similar reviews.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
- Cream butter and peanut butter together. Add the sugars and stir until well mixed.
- Add eggs one at a time, then add vanilla.
- Mix oatmeal and baking soda separately, then stir into batter.
- Add chocolate chips last.
- Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

MONSTER COOKIES
These are very crisp, crunchy cookies that are full of chocolatey goodness. A big hit in our house. For this recipe I recommend weighing your oats, I found that when using a measuring cup I get way too many oats as opposed to using the weight on the carton. I also used a medium cookie scoop to measure out the cookies (probably 1/8th of a cup). Since it makes 66 cookies I recommend making some dough balls and freezing them until firm, then putting them in a freezer bag to bake at a later time. Then you can just pull out what you need and bake them. Prep time is an estimate.

- Preheat the oven to 350.
- Combine the butter and peanut butter until smooth.
- Add brown sugar, eggs, egg whites and vanilla.
- Beat until smooth.
- Add oats, baking soda, and salt.
- Hand mix in chocolate chips and M&Ms.
- Drop spoonsfuls of dough at least 2 inches apart on cookie sheet.
- Bake for 15-17 minutes or until golden.
- Let cool for a few minutes on sheet and then put on wire rack to cool.

MONSTER COOKIE BARS
This is the bar form of one of my favorite cookies, the monster cookie! The monster cookie originated in Michigan and contains oats, peanut butter and candy-coated chocolates, and traditionally does not have flour. I love the chewy consistency and nutty flavor from the oats and peanut butter. It's kind of like a more indulgent granola bar!

- Preheat the oven to 350 degrees F.
- Line a 9-inch square metal pan with parchment paper that comes up on two sides to give you little wings.
- In a medium bowl, combine the oats, coconut, baking soda, cinnamon and salt. In a large bowl, whisk together the peanut butter, brown sugar, butter and granulated sugar until combined and creamy. Add the eggs one at a time, whisking well after each. Add the vanilla. Using a rubber spatula, fold in the oat mixture until combined, then fold in the peanuts and chocolate-coated candies. Press into the baking pan. Press a few additional chocolate-coated candies into the top.
- Bake until browned around the edges; begin checking for doneness at 28 minutes. Let cool in the pan completely, then carefully lift out of the pan and use a sharp serrated knife to slice into bars. Store in an airtight container at room temperature for a few days.
PEANUT BUTTER MONSTER COOKIES

- HEAT oven to 350 degrees F. Beat shortening, sugar, brown sugar and vanilla extract in large bowl on medium speed of electric mixer until light and fluffy. Add peanut butter, eggs and water; mix well.
- COMBINE flour, baking soda and salt in large bowl. Stir in oats. Gradually add to peanut butter mixture until well blended. Stir in chocolate chips. candy coated chocolate pieces and coconut. Cover and chill 30 minutes.
- DROP by heaping tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Flatten to 2-inch circles. Bake 10 to 12 minutes or until light brown around edges. Cool 2 minutes before removing to wire rack to cool completely.
- VARIATION
- JUMBO PEANUT BUTTER MONSTER COOKIES: Prepare cookie dough as directed above. Drop by 1/4-cupfuls, 3 inches apart, onto ungreased cookie sheets. Flatten to 3-inch circles. Bake 13 to 15 minutes or until light brown around edges. Makes 1 1/2 dozen.
HOLIDAY MONSTER COOKIES
These giant, saucer-sized cookies are packed with festive candies, peppermint chunks, salty pretzels and white chocolate chips, so they really live up to their name. Serve them as part of a cookie swap, for dessert on Christmas Day or as the special treat left for Santa -- with a really big glass of milk!

- Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
- Whisk together the flour, baking powder, baking soda and salt in a bowl until evenly combined. Combine the butter, brown sugar and granulated sugar in a large bowl and beat with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the vanilla, then add the eggs and yolks 1 at a time, beating well after each addition. Add the flour mixture and beat on low until the dough just comes together. Add the chocolate candies, oats, pretzels, peppermint puffs and white chocolate chips and stir with a large spoon until evenly mixed.
- Scoop eight 1/3-cup portions of dough, roll into balls and divide between 2 baking sheets, spacing the cookies evenly apart. Press the dough balls into thick disks with the palm of your hand. Bake, rotating the baking sheets top to bottom and front to back halfway through, until the cookies are golden brown at the edges and barely brown in the very middle, 18 to 20 minutes. Cool the cookies on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely. Repeat with the remaining dough.
MONSTER PB M&M COOKIES
This is DD's favorite cookie. They come out about the size of the lid on the Crisco can. Not cheap to make, but fun to do with the kids once or twice a year for something special Be sure to have a large dishpan or bowl to mix them up in.

- Heat oven to 350 degrees. In a small bowl combine flour, baking powder, salt and rolled oats. Set aside. In the bowl of an electric mixer combine butter, light brown sugar and superfine sugar. Beat until creamy. Add egg and vanilla, and beat again until smooth.
- Add flour mixture to butter mixture, and beat until smooth. By hand, fold in chopped pecans and M&M's.
- Roll quarter-cup measures of dough into balls and flatten them into fat disks (about 1/2 inch thick). Place on a parchment-lined or greased baking sheet, about 6 at a time, so they have room to spread.
- Bake until cookies are risen, dry on surface and very lightly browned, 15 to 20 minutes. They will be too soft to lift from baking sheet. Set aside to harden for 5 minutes, then transfer to a wire rack to cool.

MONSTER COOKIES
I was surprised when I first saw this recipe as usually Monster Cookies are made with huge amounts of ingredients. This one does not have flour, and I was told by the friend to use Quick oats other wise the cookies come out very dry. I used the medium size scoop from Pampered Chef to make these cookies. Very good!
