HUNGARIAN MUSHROOM SOUP, FROM THE MOOSEWOOD COOKBOOK

As I've said before, I LOVE mushrooms, so here is another great recipe using them. Make this with a variety of mushrooms,and hot paprika, or smoked paprika, very nice. This is from Marie on another recipe site. Mega suggested the following: "One thing I changed was to use an 8oz brick of low fat cream cheese instead of the milk and flour. " Give it a try!

Hungarian Mushroom Soup, from the Moosewood Cookbook image

Steps:

  • Saute onions in 2 Tbsp stock, salt lightly.
  • A few minutes later, add mushrooms, 1 tsp dill, 1/2 cup stock or water, soy sauce, and paprika.
  • Cover and simmer 15 minutes.
  • Melt butter in large saucepan.
  • Whisk in flour and cook, whisking, a few minutes.
  • Add milk and cook, stirring frequently, over low heat about 10 minutes - until thick.
  • Stir in mushroom mixture and remaining stock.
  • Cover and simmer 10-15 minutes.
  • Just before serving, add salt, pepper, lemon juice, sour cream, and, if desired, extra dill (1 tsp).
  • Serve garnished with parsley.

Moosewood Lentil Soup Recipe Recipe - (3.8/5) image

Steps:

  • Place lentils and water in a soup pot or Dutch oven. Bring to a boil, lower heat to a simmer, and let cook until lentils are mushy (about 45 minutes). Add more water as needed, until the soup is your favorite consistency. Heat oil or melt butter in a medium-sized skillet. Add onion, celery, and carrots, and sauté over medium heat for about 10 minutes. Add garlic, salt, pepper, and herbs of your choice, and sauté about 5 minutes longer. Transfer to lentils. Stir in wine, if desired, lemon juice and molasses or brown sugar. Taste to correct seasonings, then simmer for at least 15 minutes longer. Serve hot, with a little vinegar drizzled onto each serving, and a sprinkling of minced scallions or parsley on top, if desired.

3 C lentils, any type
7 C water or stock (more as needed)
1 Tbsp grapeseed oil or butter
1 cup chopped onion
1 cup minced celery
1 cup chopped carrots
1 Tbsp minced garlic
1 tsp salt
black pepper to taste
a few pinches of dried herbs (thyme, oregano, or basil)
2 medium-sized ripe tomatoes, chopped
2 Tbsp dry red wine (optional)
2 Tbsp fresh lemon juice
1 Tbsp molasses or brown sugar
Red wine vinegar for the top
Minced scallions for the top (optional)

Vegetarian Split Pea Soup image

Steps:

  • Place first 5 ingredients in a large pot.
  • Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
  • Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
  • Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
  • Season to taste with pepper and vinegar.
  • Serve with a drizzle of sesame oil, diced tomato and minced parsley.

3 cups dried split peas
7 cups water (may need more) or 7 cups vegetable stock (may need more)
1 bay leaf
2 teaspoons salt
1 teaspoon dry mustard
2 cups onions, minced
4 medium garlic cloves, minced
3 stalks celery, minced
2 medium carrots, sliced
1 potato, diced
fresh ground black pepper
1 -4 tablespoon balsamic vinegar, to taste (or red wine vinegar)
sesame oil (optional)
fresh ripe tomatoes, diced (optional)
fresh parsley, minced (optional)

MOOSEWOOD GOLDEN SPLIT PEA AND SWEET POTATO SOUP

I wanted to save this before I tried it. It is a bit different from the other Moosewood Golden Split Pea Sweet Potato Soup already posted on Zaar. This came from a January 1992 Bon Appetit article on the Moosewood Restaurant.

Moosewood Golden Split Pea and Sweet Potato Soup image

Steps:

  • Heat oil in large saucepan over medium high heat. Add onion and jalapeno and saute until tender, about 3 minutes.
  • Stir in ginger and next 4 ingredients and cook 1 minute.
  • Mix in 7 cups water, sweet potatoes and split peas.
  • Bring to a boil, reduce heat to medium low, cover and simmer about 1.5 hours until potatoes and peas are very tender.
  • Whisk soup vigorously for a smoother texture and thin with additional water if needed.
  • Season with salt and pepper.
  • Top each serving with a tablespoon of yogurt, a lime slice and some cilantro to serve.
