- Cream butter and sugar until creamy. Add flour and vanilla. Add ground almonds and mix. Chill for about 1-2 hours.
- Mold small amount of dough around each kiss, completely covering the chocolate. Place in ungreased baking sheet and bake at 300°F for 14-18 minutes. Halfway through baking reverse the baking sheet. Cool cookies slightly and roll warm cookies in a plate of confectioners sugar.
- Watch these cookies carefully as they bake. The bottom of the cookie should only be lightly brown.

- In a large mixing bowl, cream butter, sugar and vanilla.
- Combine flour and salt; gradually add to the creamed mixture and mix well.
- Shape into 1-in. balls; place 2 inches apart on ungreased baking sheets.
- Make a deep indentation in the center of each cookie.
- Bake at 350° for 10-12 minutes or until the edges just start to brown.
- Remove to wire racks to cool completely.
- For the filling, in a large mixing beat cream cheese, sugar, flour and vanilla.
- Add pecans and coconut; mix well.
- Spoon 1/2 teaspoon into each cookie.
- For topping, heat chocolate chips, butter and water in a small saucepan until melted.
- Stir in sugar.
- Drizzle over cookies.

- Melt dark chocolate over gentle heat.
- Combine marshmallows, cereal, cookies, peanuts and cherries.
- Pour the melted chocolate over nut/cereal mixture and combine well.
- Spoon mixture onto waxed paper lined baking sheets in mounds that resemble (very roughly) little mountains.
- Melt white chocolate. Spoon some white chocolate on each cookie and let it run down the "peak" like snow caps on a mountain. Makes 38 cookies.

BIG ISLAND-STYLE STONE COOKIES

People either love 'em or hate 'em. I'm posting this for the die-hards like me who can't get enough of 'em!

- Preheat oven to 325 degrees. Line cookie sheet with parchment paper or grease lightly.
- Cream butter with sugar until light and fluffy. Add eggs and cream; mix well. Add baking soda and vanilla; mix well. Add flour; mix well.
- Dough may be crumbly. Form by hand into 2-inch balls, place on cookie sheet and flatten.
- Bake until very firm and brown, about 35 minutes. Check cookies frequently in the last few minutes to be sure they don't burn. As long as they feel at all soft in the middle, they need more baking time. Cool and store in airtight container.
- The writer of the food article had this note: They're done when they no longer give at all when pressed in the center. If they're the least bit soft, leave them in the oven. I actually took mine out a little too early - I was afraid they were getting too brown - and although they were hard, they weren't rock hard. I consider this a plus, but if you really want that tooth-breaking goodness, push the envelope and bake 'em 'til they're solid.
BLUE RIDGE MOUNTAINS CHOCOLATE CHIP COOKIES
These cookies have been served for over 75 years in the quiet village of Orkney Springs, VA. We have stayed in this retreat center called Shrine Mont where people come for rest, devotion, and fellowship. A couple of things set these cookies apart: butter and shortening ensure a thick cookie, soft in the middle, with a touch of almond extract.

- Note: The recipe initially calls for 2 1/2 cups flour, but with the added note if you want them more softer and rounder cookie to add 1/4 cup flour. I add the 1/4 cup making it 2 3/4 cups total.
- Cream shortening, butter, sugars, then eggs and vanilla and almond extracts.
- Blend dry ingredients and add to mixture.
- Stir in Chocolate chips.
- Drop by large tablespoons (I use cookie scoop) onto ungreased cookie sheet, leaving 2-inches room in between to allow cookies to spread. I press down lightly with a measuring cup to bake more uniform cookies).
- Bake at 375° for 10 minutes until lightly brown.
- Makes 2-3 dozen cookies depending on size.

I was determined to make a tasty, guilt-free cookie and I am very pleased with how these turned out. They're not very sweet but have a subtle flavor of applesauce and cinnamon mixed in with chocolate chips, nuts, and dried cranberries.

- Beat applesauce, white sugar, brown sugar, and vanilla in a large bowl. In another bowl, use an electric mixer to beat egg whites until they are frothy and begin to firm up. - Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Whisk together all-purpose flour, whole wheat flour, flax seed meal, cinnamon, baking soda, and salt in a bowl.
