BEST MUSTARD EVER

- In a small, microwave-proof bowl whisk together the dry mustard, brown sugar, salt, turmeric, paprika and garlic powder. In a separate container, combine the pickle juice, water and cider vinegar and have standing by. Place the mustard seed into a spice grinder and grind for a minimum of 1 minute, stopping to pulse occasionally. Once ground, immediately add the mustard to the bowl with the dry ingredients and add the liquid mixture. Whisk to combine. Place the bowl into the microwave and heat on high for 1 minute. Remove from the microwave and puree with a stick blender for 1 minute. Pour into a glass jar or container and allow to cool uncovered. Once cool, cover and store in the refrigerator for up to 1 month.
MUSTARD MAYONNAISE SAUCE
A creamy mayonnaise with a kick. This is great served on steak sandwiches. We also like to serve it alongside crab cakes. Can be stored for 4 days in fridge.

PASTRAMI-STYLE STEAK & MUSTARD MAYO

- Mix the mayo with the mustard and set aside. Season the steaks. Heat a drizzle of oil and the butter in a large frying pan over a high heat until sizzling and turning nut brown. Cook the steaks for 1-2 mins on one side, then turn and cook for another 1-2 mins. Turn again and continue this process for 6-7 mins total for rare, 8-9 mins for medium- rare and 10 mins for medium. Turning the steaks helps them cook evenly and build a uniform crust.
- When the steaks are cooked to your liking, transfer to a board and leave to rest. Meanwhile, cook the sauerkraut in the pan with the sticky steak juices for 3-4 mins until heated through and browned. Serve the steaks with the sauerkraut and the mustard mayo on the side, or spoon the sauerkraut over the steaks.

BAKED FISH IN MAYONNAISE AND MUSTARD
An old recipe I have in my fish collection that's simple, fast and tasty. I've also used this with Walleye and Bass fillets.

Steps:
- Preheat oven to 400°.
- Place fish in lightly greased shallow baking dish.
- Stir mayonnaise, mustard, onion, cayenne and dill weed in a small bowl until blended.
- Spread mixture on the fish.
- Bake at 400°F for approx 20 minutes or until fish flakes easy with a fork.
CILANTRO-MUSTARD MAYO (DIP OR SAUCE)
Makes about 1 cup. It works best with salmon, swordfish and shrimp as a sauce. Also nice as a dip with raw veggies.
