Steps:
- Soak the prawns in water for 30 mins, drain them. Chop the prawns.
- Pound the shallots set aside. Pound the garlic and set aside.
- Pound the chillies, set aside.
- Heat a deep frying pan and add the sesame oil. When the oil is hot fry the shallots and garlic.
- Reduce the heat and add the chillies and prawns, stir 30 seconds.
- Add the shrimp paste, stir till it dissolves.
- Add the cooked rice and the soy sauces, stir to mix the ingredients . Set the pan aside.
- In a wok, heat 3 tbsp oil, when hot add the egg and cover it with the rice, cook till the egg is just cooked. Fry the whole, mixing the egg into the rice.
- Add the spring onion and season with salt to taste.

Steps:
- For the eggs: Preheat the oven to 375 degrees F. Spray the bottom and sides of an 8-inch square baking dish with cooking spray.
- In a medium bowl, whisk the bean sprouts, eggs and garlic.
- For the rice: In a large bowl, combine the rice, peas and carrots, soy sauce and chicken. Add the egg mixture and toss to coat. Gently pat into the prepared dish. Cover with aluminum foil. Bake, removing the foil about 10 minutes into baking, until the eggs have set and the casserole is golden brown, 20 to 25 minutes.
- For the topping: Serve topped with the fried onions, scallions and a squirt of sriracha to taste.

- add rice,onions and stir well.
- add meat,vegetables and fry.
- add in soy sauce and ground dried prawns.
- stir till rice is uniform coloured.
- add in scrambled eggs.
- serve.
