- Preheat the oven to 400 degrees F.
- In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer on a baking sheet. Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven for 10 to 15 minutes.

- Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
- Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.

- Preheat oven to 400 degrees. Prick potatoes in several places with a fork. Place on a baking sheet, and bake until easily pierced with the tip of a knife, 50 to 60 minutes.
- Meanwhile, make onion sour cream: In a 10-inch skillet, heat oil over medium-low heat. Add onion and cook, stirring occasionally, until translucent, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature.

- Grease base and sides of 1.5 litre ovenproof dish.
- Line dish with some of the sliced potatoes.
- Scatter some onions and garlic on top.

- Slice potatoes carefully through a long side, almost to the bottom but not through, to create even, fan-like cuts.

This is an excellent thing side dish to bring to a bar-b-que to throw on the grill and, "Forget-about-it!" (must use your best Boston accent). I'm sorry for anybody out there who needs measurements in absolute terms-this recipe is fail proof (as long as you don't use an obscene amount of onion soup mix), so the measurements are just based on your own personal preferences and how many servings you need.

- Slice potato(s) into 1/2 inch thick slices (vertically, not lengthwise), and slice onions also in 1/2 inch thick slices.
- Place the end potato slice on a piece of heavy duty tin foil that's big enough to roll around the newly expanded entire potato a couple times. Then, layer side by side as you reassemble the potato first a piece of potato, then a pat of butter, then and onion, then a pat of butter, then a potato again -- until it is back in a potato shape.
- Then, place some slices of butter on top of the potato and sprinkle about 1-2 tablespoons of the Lipton's Onion Soup Mix over the butter.
- Roll the whole thing up in the tin foil making sure that you seal it tightly and cook it, turning once when it is half way cooked (you may want to put a pan lined with more tin foil below it to catch any butter that may squeek out if you are oven cooking it).
- You may bake it in a 350°F preheated oven for an hour and a half, but my favorite way to cook this is to place the tin foil wrapped rolls directly on the coals of a bar-b-que for at least an hour (this will char it just a tad and add a great smokiness).

- Preheat oven to 400 degreesF.
- Spray a 2 quart baking dish with oil.
- Cook the potatoes covered in cold water, bring to boil and simmer until just tender (approximately 10 minutes).
- Drain and set aside.
- While the potatoes are cooking, put 2 tbsp of oil in a skillet and over medium-low heat cook the onions and garlic until the onions begin to brown (Apprx 15 minutes).
- Spread a thin layer of potatoes in the baking dish, sprinkle with thyme, salt& pepper.
- Top with a layer of onions.
- Repeat layers twice ending with a layer of onions.
- Pour in Milk and sprinkle with Paprika.
- Bake until lightly browned (about 20 minutes).
- Serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Arrange potatoes on a baking sheet.
- Bake potatoes in the preheated oven until tender, about 1 hour.
- Melt 2 tablespoons butter in small pot over medium heat. Add green onions; cook until soft, about 4 minutes. Stir in flour until well blended, about 1 minute. Pour in milk and 1/2 cup half-and-half gradually, stirring sauce constantly. Season with salt and cook until sauce is thickened, 10 to 15 minutes.
- Cut a slice from the top of each baked potato and scoop the pulp into a bowl. Mash pulp until no lumps remain. Add 1/4 cup half-and-half and 1 tablespoon butter; blend together with an electric mixer. Stir in 1/2 cup Parmesan cheese and pepper until fully combined.

- Preheat the oven to 400 degrees F.
- Put the potatoes into a pan of boiling, salted water and cook for around 8 minutes, then drain and return to the pan. Chuff them up a bit by shaking the pan.
- Get a roasting pan, into which you can fit the potatoes in 1 layer, and heat it on the stove.
- When hot, pour a glug of olive oil into it and add the butter, rosemary and garlic.
- Add the potatoes and toss them in all the flavors.
- Add the onions and all the balsamic vinegar and season with salt and pepper.
- Cook for 5 minutes on the burner to reduce the balsamic vinegar a little.
- Place the pan on the top shelf and cook for around 50 minutes, until the potatoes and onions are dark, sticky and crispy - removing the pan to toss the onions and potatoes halfway through.
CARAMELIZED ONION-STUFFED BAKED POTATO
Recipe comes courtesy of Cooking Light magazine (March 2005 edition). This is definately a different way to stuff a potato and it is very delicious! Only adjustment I made to the recipe was the cooking process of the end potato. Recipe says to microwave the fully stuffed potato to melt the cheese, but I placed them in the oven for about 5 minutes with the other dish I was preparing and it worked just fine. If you like potatoes, definately give this one a try.

- Pierce potatoes with a fork; arroange on paper towels in microwave.
- Microwave on High for 10 minutes or until done.
- Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4 inch thick shell.

- Heat oven to 140C/120C fan/gas 1. Bake the potatoes for 2 hrs until soft to the middle (alongside the pork is fine).
- Toss the potatoes with the olive oil, most of the spring onions, thyme and plenty of seasoning in a slightly-too-small roasting tin. Use the back of a fish slice or similar to squash the potatoes into a flat-ish compact cake. Chill until ready to finish, for up to a day.
- Heat oven to 220C/200C fan/gas 7 (when the pork comes out). Drizzle the spuds with a little more oil and roast for 30-40 mins until golden and crisp. Mix the salad cream and soured cream, drizzle over, then scatter with remaining spring onions and more seasoning, and serve.
