ORANGE 'N VANILLA MOUSSE PIE
I got this recipe from a Knox envelope. Looks quick, easy and refreshing. Enjoy! (prep time is chilling time; not stated on the envelope, so I am just guessing!)

Steps:
- In blender, sprinkle gelatine over cold water; let stand 1 minute.
- Add hot cream and process at low speed until gelatine is completely dissolved, about 2 minutes.
- Add cream cheese, orange juice concentrate, sugar and vanilla; process at high speed until blended.
- Chill blender container until mixture is slightly thickened, about 15 minutes.
- Pour into prepared crust; chill until firm.

Steps:
- Preheat oven and bake pie crust according to package directions. Allow to cool completely.
- Meanwhile, in 1-quart saucepan, mix gelatin and orange juice; let stand 1 minute. Cook and stir over medium heat until dissolved.
- In small bowl, beat cream cheese, powdered sugar and orange peel with electric mixer on medium speed until smooth and fluffy. Gradually add softened gelatin; blend well.
- Refrigerate until slightly thickened, about 15 minutes.
- In large bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold whipped cream into orange mixture; gently fold in chopped oranges.
- Spoon into crust. Refrigerate until firm, about 2 hours. Garnish with additional orange peel, if desired.
- Cover and refrigerate any remaining pie.

DREAMY ORANGE MOUSSE

- In a small saucepan set over medium heat, bring the orange juice to a boil and cook until reduced by half, about 4 minutes. Meanwhile in a small bowl, whisk together 1/2 cup of the sugar, the salt and yolks until smooth. Whisking constantly, add half of the reduced orange juice to the yolk mixture to temper. When it is all incorporated, return the tempered yolk mixture to the pan. Cook over low heat, stirring constantly with a rubber spatula to prevent the eggs from scrambling, until thick enough to coat the back of a spoon, about 7 minutes. Strain the mixture into a clean bowl and whisk in the butter, 1 tablespoon at a time, and the zest. Place a piece of plastic wrap directly on the surface of the mixture and refrigerate until chilled through, at least 5 hours.
- Pour the heavy cream into a medium bowl, and add the vanilla and the remaining 2 tablespoons sugar. Using an electric mixer, beat the cream on medium speed just until stiff peaks form, 2 to 3 minutes, being careful avoid over-beating. Using a rubber spatula, gently fold half of the whipped cream into the chilled orange mixture. Pour that mixture into the remaining whipped cream and continue to fold until completely incorporated. Divide the mixture among six 3-ounce serving bowls or espresso cups. Cover with plastic wrap and refrigerate until ready to serve.
- When ready to serve, put the gingersnaps in a resealable plastic bag and smash gently with a rolling pin. Sprinkle on top of the mousse, and serve.
FROZEN ORANGE-VANILLA PIE
Steps:
- Grate the zest of 2 oranges; set aside. Juice the oranges and whisk with 1 1/2 cups Greek yogurt, one 14-ounce can sweetened condensed milk, 2 tablespoons lemon juice, 1 teaspoon vanilla and a pinch of salt. Remove 1/4 cup of the mixture to a small bowl and stir in the orange zest. Pour the plain filling into a 9-inch graham cracker crust. Spoon the zest mixture over the top, then swirl with the back of the spoon. Cover and freeze until set, about 4 hours.
REESE'S MOUSSE PIE
If you have a peanut butter lover in your family, this can be his or her special dessert. Peanut butter mousse is between two layers of sweetened chocolate inside a pie crust.

- Bake crust according to directions.
- Cool.
- Sprinkle gelatin over cold water in small bowl, let stand 1 minute to soften.
- Add boiling water, stir until gelatin is completely dissolved.
- Cool slightly.
- Combine sugar and cocoa in medium bowl; add whipping cream and vanilla.
- Beat at medium speed until stiff; pour in the gelatin mixture, beating until well blended.
- Spoon 1 cup of the chocolate mixture into cooled crust; refrigerate while preparing peanut butter layer.
- Melt 1 1/2 cups peanut butter chips as directed on package.
- Beat cream cheese and powdered sugar in medium bowl; gradually.
- add 1/3 cup milk until smooth.
- Add melted chips; beat well.
- Beat in remaining 2 tablespoons milk.
- Lightly spread over chocolate layer in crust.
- Top with remaining chocolate mixture.
- Refrigerate several hours.
- Garnish with remaining chips.
- Cover; store leftover pie in refrigerator.

MANGO MOUSSE PIE
A cool dessert with tropical touches. Coconut crust for crunchy contrast to the smooth filling. Needs at least 4 hours chilling time for the filling to set up so plan ahead.

Steps:
- Heat oven to 350ºF. Position rack in lowest position.
- Spread butter evenly over bottom & up sides of a glass 9 inch pie plate.
- Sprinkle coconut over bottom & up sides of baking dish, pressing into the butter to form a shell.
- Bake for 13 minutes or until rim is lightly browned (center & sides will just be turing golden brown). Remove from oven & cool completely.
- Place mango in blender or food processor & puree until very smooth. There should be 2 cups of puree. Pour in a large bowl & stir in orange juice.
- In a 1 cup glass measure, add 2 tablespoons cold water. Sprinkle gelatin over water & let soften for 2 minutes then stir. Heat in microwave 10-15 seconds to dissolve gelatin. Stir, set aside to cool for 5 minutes.
- In a small bowl, whip cream with sugar until stiff.
- Add gelatin to mango mixture; stir well. Gently fold in whipped cream till no white streaks remain.
- Pour filling into cooled crust. Garnish with toasted coconut if desired. (see cook's notes).
- Refrigerate 4 hours or overnight.
- **Cooks note: if desired, measure out 1/3 cup of the coconut for garnish. Spread it in another pan & bake for 6 minutes, stirring once or twice or until browned.
