HARD COOKED EGGS IN THE OVEN (BAKED EGGS)

From Alton Brown's "I'm Just Here for the FOOD". Haven't tried this yet, but Alton says this provides a creamer egg than steaming or boiling. He says it is a bit harder to peel though. Posted in response to a recipe request. (NOTE: Servings depends on how many eggs you decide to cook!)

Hard Cooked Eggs in the Oven (Baked Eggs) image

Steps:

  • Position the oven racks in the center of the oven.
  • Place the eggs on the racks.
  • Place a baking sheet pan in the bottom of the oven (just in case an egg breaks).
  • Set the oven to 325F, and bake for 30 minutes.
  • When the eggs are done, fill a large bowl with ice water and move the eggs into the bowl.
  • Peel the eggs as soon as they're cool enough to handle, then return them to the ice water to thoroughly chill.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put 1 egg in each of 12 muffin cups.
  • Bake in preheated oven for 30 minutes.
  • Plunge baked eggs in a large bowl filled with ice water until cooled completely, about 10 minutes.

Oven Style Scotch Eggs image

Steps:

  • Shell hard-boiled eggs.
  • In a small bowl combine sausage meat with sage, garlic powder, onion powder, cayenne pepper and black Pepper.
  • Divide sausage into 8 equal portions, flatten each portion to about 1/8-inch thickness.
  • Roll each egg in flour and place on top of each sausage patty.
  • Use each sausage patty to wrap around each egg until it is completely encased, pressing edges together to seal (wet or floured hands make this easier).
  • Beat the egg in a shallow dish and place breadcrumbs on a flat plate.
  • Dip each sausage-coated eggs in beaten egg and roll in crumbs.
  • Place on baking tray lined with aluminum foil and bake in oven at 375°F for 25 to 30 minutes until golden brown (turn every 10 minutes for even browning).
  • For a crispy crust spray very lightly with Pam baking spray before baking.
  • When ready to serve, line platter with lettuce and arrange Scotch Eggs, cut in half, among the lettuce.
