The way my mom always made 'em. I serve these with smoked sausage or kielbasa. These are NOT hash browns, and will not be crispy

Steps:
- In a skillet, melt bacon fat.
- Add onions and saute 2-3 minutes.
- Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange).
- Fry, covered, over medium heat until soft and tender.
- If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.
AWESOME PAN FRIED POTATOES
I made this up tonight in search of something different from baked(boiled)potatoes. My oven was not working yet so I decided to pan fry them and they were a hit. ***Updated on 9/16 to add that potatoes should be browned and to add more oil as needed.

- Microwave potatoes for 5-6 minutes to soften.
- Cut potatoes into bite size pieces(about 1 inch cubes).
- Dice onion.
- Spray large frying pan with olive oil and add potatoes, onions,paprika and garlic adding more oil as needed to brown the potatoes. Cook on medium heat until tender and browned.
- When done, add white wine and salt and pepper to taste.

EASY FRIED POTATOES
This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

- Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
- Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
- Add salt and pepper sometime during frying time, to taste.

PAN FRIED POTATOES
Easy to make and great with Recipe #272121 or any other beans! Leave out the butter and it is vegan!

Steps:
- Microwave the potatoes or use leftover baked potatoes (Recipe #280220) and set aside until cool enough to handle. Peel the potatoes and slice about 1/3 inch thick in rounds.
- Heat oil and butter in pan and when butter stops sizzling start cooking the onion but don't let them brown much.
- I use a 9" preheated cast iron pan for this recipe.
- Add potatoes to the pan and put a lid on it over medium low heat until the potatoes are starting to brown on the bottom, and then remove the lid and continue browning. Add salt and pepper on top of the potatoes.
- When the bottom of the potatoes are brown enough for you (should be mahogany colored) put a plate over the pan and flip the potatoes out. Slide the potatoes back into the pan (first add a little butter if it needs it) and brown the potatoes. Do not replace the pan lid.
- Slide potatoes onto a platter and sprinkle with paprika. Cut into wedges and serve with eggs, beans, what you like.

PERFECT FRIED POTATOES

- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.
ITALIAN PAN-FRIED POTATOES

- Preheat the oven to 350 degrees F (175 degrees C).
- Stab the potatoes with a fork and microwave until cooked, about 9 minutes. Let cool, about 10 minutes. Slice into wedges.
- Heat 1 tablespoon oil and butter in a small pan over medium-low heat. Saute onion and garlic with salt and pepper until tender and sweet, 5 to 7 minutes. Remove from heat.
- Heat enough remaining oil to coat the bottom of a large nonstick pan over medium-high heat. Cook potatoes in batches, making sure they aren't crowded in the pan. Turn carefully until golden and crispy, 7 to 10 minutes. Keep the first batch in the preheated oven until the second batch is done.
- Add olives to the second batch and cook for 1 minute. Add potatoes from the oven and onion-garlic mixture. Toss in the pan until everything is heated. Drain on paper towels and sprinkle with parsley, salt, and pepper.

UNCLE BILL'S FRIED POTATOES AND ONIONS
I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me. A very easy, simple but tasty side dish. Young potatoes are especially good.

- Peel and slice potatoes about 1/8 inch thick or thinner.
- Slice onion thinly.
- In a large frying pan on medium-high heat, melt butter, add olive oil.
- Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatula, turn the potatoes and onions over so they do not break apart. If potatoes appear too dry, add some additional butter.
- Sprinkle with granulated garlic powder, dried dill weed, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
- Serve hot with your meal.
- Note: You may use 2 or 3 large garlic cloves (chopped small), instead of granulated garlic powder. Add to the potatoes after the first 10 minutes of cooking time.
PAN FRIED SWEET POTATOES
I like coming up with new ways to serve foods so that I don't get bored with the same dishes all of the time. I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

- Dice sweet potatoes no thicker than 1/4 inch thick.
- Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.
- Place oil in pan and add potatoes, garlic, and onions and then coat well(be sure that oil is not left to heat up or it will scorch the onions and garlic).
- Sprinkle salt and pepper just after adding other ingredients to the pan.
- Allow the potatoes to cook for a few minutes and check for browning. Keep temperature from getting too hot.
- Stir occasionally until potatoes are to your desired doneness (approx 10 minutes for me.
- Turn off heat and add brown sugar while still hot. Stir well and serve.
- * variation* try using butter instead of olive oil for a more sweet and traditional flavor.

PAN-FRIED POTATOES (BRATKARTOFFELN)
A quick German favorite from leftover potatoes. The tricks to sucess are cold potatoes, a good non-stick pan and PATIENCE. - Make it a main dish by using onion and bacon or a side with potatoes only. Good with fried meat. Best use firm potatoes, others might cook to mush.

- Cut potatoes into evenly thick slices (about 3/16 in ).
- Use a large pan that will hold potatoes in a single layer or use two pans.
- Heat oil over medium high heat.
- If using bacon and onion fry together until onion is translucent.
- Add potatoes, stir once to mix and then be patient!
- DON'T stir until potatoes are nicely golden brown on the bottom, 3-5 minutes, only check for color occasionally.
- Sprinkle with half the salt. Use less salt when using bacon.
- Turn and fry the same way on the other side until nicely gold-brown.
- You might need to add a little more oil to the pan if all the oil is soaked up by the potatoes.
- Taste with salt and pepper.
- Serve sprinkled with parsley.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
