Steps:

  • Mix together sausage, cheese, milk and egg in a large bowl. Add buttermilk pancake and waffle mix with onion soup mix and ground red pepper. Blend well. Pinch off bits of dough and shape into 1- inch balls. Place on lightly greased baking sheets, spacing 1 1/2 inches apart, and sprinkle lightly with paprika. Bake 10 to 15 minutes at 375 degrees until deep golden brown, turning the balls over at halftime. Remove from baking sheets and serve.

1/2 pound bulk pork sausage
2 cups shredded sharp Cheddar cheese
1/4 cup milk
1 1/2 cups buttermilk, pancake and waffle mix
2 tablespoons dry onion soup mix
1/8 to 1/4 teaspoon ground hot red pepper

My Mom's Holiday Sausage Holiday Balls image

Steps:

  • For the applesauce: Preheat the oven to 375 degrees F.
  • Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
  • For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

4 Granny Smith apples
1 tablespoon unsalted butter
1 tablespoon canola oil
1 pound ground pork sausage
4 cups grated sharp Cheddar
3 cups instant pancake mix
2 tablespoons minced fresh chives
Kosher salt and freshly ground black pepper

I wanted to make a quick-and-easy-to-eat brunch item and this was perfect! They are moist and packed full of flavor. This will be a crowd-pleaser for sure and great for brunch potlucks! You can also freeze the leftovers and heat up for a quick morning breakfast, great for kids! Dip balls into maple or blue agave syrup and top with confectioners' sugar or country gravy.

Bacon, Egg, and Cheese Pancake Balls (with Cake Pop Maker) image

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble into small pieces.
  • Beat 3 eggs in a small bowl until smooth; pour into the hot skillet. Cook, stirring, over medium heat until scrambled and set, about 5 minutes.
  • Preheat a cake pop maker according to manufacturer's instructions.
  • Combine remaining egg, baking mix, milk, and vegetable oil in a large bowl to make pancake batter.
  • Fold crumbled bacon, scrambled eggs, and Cheddar cheese gently into the batter.
  • Fill wells of preheated cake pop machine with batter. Cook until golden brown, 4 to 6 minutes. Repeat with remaining batter.
