PASTA AND PEAS

This dish is very economical, fast and really tasty. Made this when I was first married and money was very tight.(we were in the military). I still make it a lot, using different kinds of beans.

Pasta and Peas image

Steps:

  • Start the water for the pasta.
  • Meanwhile,heat a little of the oil in a sauce pan.
  • Add the onions and cook until golden.
  • (DO NOT BURN).
  • Add the herbs, peas,and 1/2 cup of water and the rest of the oil.
  • Keep warm.
  • Drain the cooked pasta and put it in a bowl.
  • Add the peas and mix.
  • Add the rest of the water, if needed.
  • I have also used Great Northern or Pork and beans--all undrained.
  • You may add a diced tomato to the onions and peas, if you like.
  • add the rest.

6 ounces ditalini, small elbow or small shells

Steps:

  • Heat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan. Add sausage meat. Crumble sausage meat as it browns. Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes. Season with salt and pepper. Stir peas and basil into your sauce to combine. Toss hot drained penne rigate in pan with the sauce, then transfer pasta to serving bowl.

PEA AND HAM PASTA SAUCE

I've been making this pasta sauce for years. It's a good way to use up left-over ham and it's fairly quick and colourful. I like it over tortellini, but shells or spirals are OK too.

Pea and ham pasta sauce image

Steps:

  • Heat the oil in a frypan, and saute the onion and garlic over medium heat until softened, about 5 minutes.
  • Add the diced ham and saute a further 2 minutes or so.
  • Add the tomato paste, and cook stirring for 2 minutes, then pour in the wine or stock.
  • If I'm using wine, I like to reduce it a little.
  • Now add the crushed tomatoes, peas and freshly ground black pepper and simmer for about 10 minutes.
  • No longer though or the peas lose their fresh green colour.
  • Add the cream and reheat gently, then stir through the chopped basil before serving.
  • Offer Parmesan cheese at the table.

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add pasta and cook until al dente. Drain pasta, reserving 1 cup of pasta water.
  • Meanwhile, saute pancetta in a large saucepan over medium-high heat until golden and crisp, about 6 minutes. Transfer to a paper towel-lined plate. In the same pan, saute onions until softened, about 5 minutes. Add peas and garlic and saute for 3 minutes. Stir in Parmesan, pasta and pancetta. Moisten pasta with some of the reserved pasta water. Toss to incorporate, season with salt and pepper, if necessary, and serve, sprinkled with lemon juice.

Creamy Lemon Pasta with Peas and Optional Ham image

Steps:

  • Bring a large pot of salted water to a boil and add the pasta. Cook about one minute less than package directions state until al dente. When one minute is left in the cooking time, add the frozen peas.
  • While the pasta is boiling, heat a large deep skillet over low heat and add the olive oil, garlic, and crushed red pepper flakes. Cook, stirring frequently, for about five minutes until garlic is tender.
  • To the garlic, add 1 cup of the water the pasta is boiling in, along with the lemon juice and the heavy cream. Increase the heat to medium and bring to a boil, stirring frequently, until the sauce thickens just a bit, about 5 minutes. Stir in the the lemon zest and 1 cup of the grated Parmesan cheese. Add a generous pinch of salt and pepper. Taste and add additional salt if necessary (if the sauce tastes too lemony, add a little more salt until the tartness mellows.)
  • If adding ham, place an additional skillet on the stove and heat the diced ham over low heat, stirring frequently
  • Drain the pasta and peas and and add it to the main skillet with the sauce. Remove the skillet from the heat and gently toss the pasta with the sauce until the pasta soaks in some of the sauce, about two minutes.
  • Scoop the carnivorous portion(s) into the saucepan with the ham and mix gently.
  • Top with the parsley and remaining Parmesan cheese, and serve.

Fresh Peach Empanadas image

Steps:

  • Place flour in a medium bowl. Whisk in sugar and salt. Cut in butter using 2 knives or a pastry cutter. Gently work in cream cheese and sour cream until dough is combined.
  • Turn dough out onto your working surface. Quickly gather crumbs together into a square; fold square in half. Flatten dough out into a larger square using a rolling pin; fold in half again. Roll out one more time and fold into thirds, like a letter. Wrap dough in plastic wrap. Chill until firm, about 1 hour.
  • Mix peaches, 3 tablespoons sugar, and cinnamon in a small bowl. Let sit for about 15 minutes. Transfer filling mixture into a strainer over a bowl to drain the excess juices for 15 minutes, stirring occasionally.
