PEGGI'S COWBOY COLESLAW

I came across this recipe when I was cooking in a restaurant & took away some things in it & added some more things in it to make it my own.It was one of my regular House salads.

Steps:

  • 1. In large bowl, combine 1st 5 ingredients & toss to mix.
  • 2. Mix all dressing ingredients with a wire wisk.
  • 3. Pour over slaw. **May not need all of dressing or may need more. I used to make big batches of this & never really measured things so had to come up with some kind of measurements. Put quite a bit of dressing on it , but don't make it swim in it.Refrigerate.

1 large head shredded cabbage
2 medium red delicious apples, cored, & chopped (don't peel)
1 c seedless red and / or green grapes, cut in half
1/2 large red onion, cut in thin slivers
1 c raisins
dressing:
1 c real mayonnaise
6 Tbsp sugar
6 Tbsp cider vinegar
6 Tbsp pocohontas honey mustard
2 tsp salt
1 1/2 tsp coarse ground blackpepper
**may need more or less dressing

PEGGI'S CHICKEN-BACON RANCH SALAD

This recipe isn't hard, but it is a little time-consuming. The results are worth every minute of preparation though. The salad is full of flavor and texture. We loved the mixture of veggies with the different meats. It's so hearty, you can have this as a main dish. Cool, refreshing and great for a summer picnic or BBQ.

Steps:

  • 1. Grill chicken breasts. Brush with butter on the top side. Season with chicken seasoning & California Style Garlic Salt with Parsley.
  • 2. Cut into strips & then into smaller bite-size pieces. Set aside.
  • 3. Cook bacon. Crumble into bite-size pieces.
  • 4. Combine all other ingredients in large bowl. Use as little ranch dressing as possible. You don't want it swimming in it. You only want it to coat it & flavor it.
  • 5. Add the chicken & toss to coat.
  • 6. Chill at least 2 hours before serving. If you think you might need a little more dressing at this time, go ahead & add some.

2 c cauliflower; chopped
2 c broccoli; chopped
1/2 lb bacon; cut in bite-size pieces & cooked & drained
1 pt cherry tomatoes (split in half, lengthwise)
1/2 each - red, green bell peppers, chopped
8 oz shredded sharp cheddar cheese
ranch dressing (very little)
1 bunch green onions, chopped
2 boneless, skinless chicken breasts
FOR CHICKEN BREASTS
butter, melted
dash(es) chicken seasoning
dash(es) California style garlic salt with parsley
