PEPPERONI PIZZA CASSEROLE
I made this using Turkey Italian sausage and Turkey Pepperoni in hopes of cutting down on the fat. We could not tell the difference in taste between the turkey products and beef or pork. And it is very good and very easy. Serve with Italian bread and green salad. Enjoy

Steps:
- Preheat oven to 350 degrees.
- On the stovetop, bring a large pot of water to boil. Cook the pasta according to package directions and drain. Return the pasta to the pot.
- Meanwhile, in a saute pan over medium heat, cook the sausage; drain. Add the sausage, spaghetti sauce and mushrooms to the pasta and stir to combine. Stir in the Parmesan cheese and half the pepperoni slices.
- Spread pasta mixture into a lightly greased 9"x13" pan. Top with the mozzarella cheese. Arrange remaining half of pepperoni slices over top.
- Bake for 20 minutes, until cheese is bubbly.

- Combine ground beef, green pepper, and onion in 2-quart casserole. Cook, covered, on Full Power for 4 to 5 1/2 minutes, or until beef is no longer pink. Stir halfway through cooking time. Drain.
- Stir in remaining ingredients, except cheese. Cook, covered, on Full Power for 6 1/2 to 9 minutes, or until mixture comes to boil. Stir. Continue cooking on Power Level 4 for 8 to 12 minutes, or until noodles are tender and liquid is absorbed.
- Top with cheese. Let stand, covered, for 5 minutes, or until cheese is melted.

This recipe is a new one I attempted tonight and my husband, who is VERY picky, absolutely loved it! I used onion powder so he wouldn't know it was there, but I suggest using fresh onion. You can also add any other pizza veggies and meats you enjoy.

Steps:
- Cook pasta according to package directions and drain.
- Pour into large mixing bowl.
- Finely chop half of the pepperoni.
- Brown hamburger meat and pepperoni along with onion powder and minced garlic.
- Drain.
- Mix pasta, pizza sauce, and meat in bowl.
- Stir in half of the cheese.
- Pour in lightly greased casserole dish.
- Sprinkle remaining half of cheese over top.
- Place remaining pepperoni slices on top.

PEPPERONI AND CHEESE CASSEROLE
Steps:
- Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking dish with 1 teaspoon oil.
- Bring a large pasta pot of water to a boil over high heat. Add a big pinch of salt and the pasta. Cover and return the water to a boil. Remove the cover and cook for 5 minutes. The pasta will not be completely cooked through.
- Meanwhile, in a large skillet over medium-high heat, add 1 tablespoon oil. When it is hot, add the onions and zucchini and cook until they are softened and brown slightly, about 5 minutes. Add the garlic and pepperoni and cook for another minute. Add the tomatoes and basil and simmer for 5 minutes. Taste and adjust the seasoning with salt and pepper. Reserve 1 cup of the tomato sauce for another use, such as Round 2 Recipe Garlic Bread Pizza.
- Stir in the pasta and cheese into the skillet. Pour into the prepared baking dish and smooth out the top. Sprinkle the breadcrumbs evenly over the top and drizzle with the 1 tablespoon oil. Bake until the top is browned and the casserole is bubbling, 20 to 25 minutes.
PEPPERONI PIZZA CASSEROLE
A cheesy casserole with all of your favorite pizza toppings. I like to serve this with a salad and garlic bread. The leftovers are great. I have prepared this in advance and then taken it to potlucks in a slow cooker the next day.

- Cook the ground beef in a skillet over medium heat until no longer pink, breaking the meat apart into crumbles as it cooks, about 10 minutes.

- Preheat oven to 400 degrees and prepare baking dish (I use a 1.75qt oval baker).
- Over medium heat, combine the ground beef, onion and garlic in a large skillet until beef is browned.

- Set oven to 400 degrees.
- Grease a 13 x 9-inch baking dish.
- In a large skillet cook ground beef with onion, garlic and green pepper until meat is no longer pink; drain fat.
- Add in 3 tablespoons (or more) grated Parmesan cheese; stir to combine.
- Add in pizza sauce, chopped pepperoni, herb seasoning and mushrooms; mix to combine and bring to a simmer for 15 minutes, stirring occasionally.

- Pour the batter over cheese, spreading evenly to cover completely.
- Sprinkle with 1/2 cup Parmesan cheese.
- Up to this point you can cover and refrigerate until ready to bake.
- Bake for 20-25 minutes, or until golden brown.
