IRISH POTATO FARLS

According to Wikipedia, A farl is a term used in Northern Ireland and Scotland for some roughly triangular flat breads and cakes, traditionally made by cutting a round into four pieces. This recipe is from my old Irish Grandma.

Steps:

  • Bring potatoes to a boil on high heat. Simmer on medium-high heat until the center of the potatoes are tender when pricked with a fork. This should take about 20 minutes.
  • Turn off heat. Drain the potatoes and return them to the pot and allow to completely dry out over remaining heat. Mash the potatoes until smooth.
  • Place warm mashed potato into a medium bowl. Stir in the flour, salt and melted butter. Mix gently until a soft dough forms.
  • On a well floured surface, knead the dough gently. The dough will be sticky. Use a (floured) rolling pin to flatten into a circle about 9 inches in circumference and 1/4 inch thick.
  • Cut into quarters using a floured knife.
  • Heat a skillet to medium high heat. Once hot, melt the butter in the skillet.
  • Sprinkle a little flour into the base of the skillet and cook the farls for 3 minutes on each side or until evenly browned.
  • Season with salt and serve right away.

  • Remove the potatoes from the pot and place them in a sieve over a bowl, allowing them to dry off slightly for 5 minutes.
  • While still hot, pass the potatoes through the sieve to yield light, fluffy potatoes. If you don't have a sieve you can use a ricer or masher to mash the potatoes either.
