- On two pieces of heavy-duty foil (about 18 in. x 18 in.), divide potatoes, onion, butter, salt and pepper. Fold foil around potato mixture; seal tightly. Cook on a covered grill over medium heat for 20-30 minutes or until potatoes are tender.

POTATO PACKETS
This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

Steps:
- Tear off 4 large squares of aluminum foil and spray with Pam.
- Scrub potatoes.
- Slice with skins on (like you would to fix fried potatoes).
- Divide potatoes among foil squares.
- Shake soup mix package before opening to mix it up well. Divide among 4 foil squares. You may or may not use whole package, depend on personal preference.
- Sprinkle 1 tablespoon cheese on each square of foil.
- Put 1 tablespoon of butter on top of each foil square.
- Fold sides to completely cover potatoes and form a square packet.
- Put on grill, my DH, puts them on the shelf of our grill and cooks for 45 minutes.
GRILLED POTATO BUNDLES

- Preheat a grill to medium-high heat.
- Pile the potatoes and onions evenly on 6 squares of foil. Add 2 tablespoons butter to each and splash on some cream. Sprinkle on some paprika, salt and black pepper, then finish with a sprinkle of minced parsley on top. Fold the foil pieces to wrap into bundles.
- Place the potato bundles on the hottest spot on the grill for 30 minutes. Serve the bundles right on the dinner plates.

- Preheat an oven to 400 degrees F (200 degrees C). Spray four sheets of aluminum foil with cooking spray.
- Divide potatoes evenly among the sheets of aluminum foil; season with salt, pepper, garlic powder, and oregano. Place 2 tablespoons of the butter flavored spread over each mound of potatoes. Create packets by folding and sealing the aluminum foil. Place the foil packets on a baking sheet.
- Bake in the preheated oven until potatoes are tender and easily pierced with a fork, 55 minutes to 1 hour. Drain melted butter-flavored spread before serving.

- Preheat barbecue to 325F (medium heat).
- Tear off a large enough piece of foil to make an 8x8" package. Place 1/3 of potato slices on foil and season with salt and pepper.
- Top with 1/2 the leeks, pancetta, garlic, and sage.
- Repeat a layer of potatoes, then a layer of the remaining leeks, pancetta, garlic, and sage. Season with pepper and top with the remaining potatoes.
- Sprinkle the top layer with gorgonzola and drizzle with cream.
- Seal up the foil package and place on grill. Cook for 30 minutes or until potatoes are tender.

- When the fire is lit but not ready, lay out 8 pieces of foil (about 12 by 8 inches) and brush with olive oil.
- Shingle an eighth of the potatoes in a circle in the center of each piece of foil. Break the onion slices into rings and scatter evenly over each potato ring. Equally divide the remaining olive oil, rosemary, salt, and pepper over the potatoes.
- With the potato rings intact, bring the two large edges of foil to the center, sealing firmly.
- Fold over the other two short edges to seal. Place on a medium or medium-hot fire for 20 to 25 minutes or until the potatoes are cooked through (Cooking in foil packets is not an exact science, so remember to check one packet after 20 minutes for doneness and to make sure the bottom isn't burning.

- Preheat oven to 425 degrees. Heat oil in a large saucepan over medium heat until hot but not smoking. Add potatoes, and cook, stirring frequently, until tender, about 12 minutes. Stir in onion and sausage, breaking up sausage as it cooks; continue cooking until meat is no longer pink, about 5 minutes more. Stir in thyme and salt; remove from heat.
- Place puff pastry on a lightly floured surface, unfold, and roll out to a 12-inch square. Cut into quarters to get four 6-inch squares. Place one quarter of the sausage mixture in the middle of each puff-pastry square.
