PREBAKED PIE CRUST
Use this crust to make Alexis's Sweet Potato Pie -- it makes a sensational Thanksgiving dessert.

Steps:
- Place flour, salt, and sugar in the bowl of a food processor and process for a few seconds to combine. Add butter and process until the mixture resembles coarse meal, about 10 seconds. With the machine running, add ice water in a slow, steady stream through the feed tube, just until the dough holds together. Do not process for more than 30 seconds.
- Turn the dough out onto a work surface. Divide in two. Place each half on a sheet of plastic wrap. Flatten and form two discs. Wrap and refrigerate for at least 1 hour before using.
- On a lightly floured surface, roll one piece of dough into a 1/8-inch-thick round. Fit into desired pie plate (8 to 10 inches in diameter). Trim pastry using scissors or a sharp paring knife. Crimp or decorate the edges of the pastry as desired. Transfer to refrigerator to chill for 30 minutes.
- Preheat oven to 375 degrees. Prick the bottom of pastry all over with a fork. Line the pastry with parchment paper; fill with pie weights or dried beans. Bake until pastry begins to color around the edges, about 30 minutes. Remove the parchment paper and weights and continue to bake just until the pastry dries out and turns a light golden color for a partially baked shell, and a deeper amber for a fully baked shell, 10 to 20 minutes more. Cool completely on a wire rack before filling.
PREBAKED PIZZA CRUST

- Combine the flour, salt and yeast in a large bowl. Stir in 2 cups warm water (about 105 degrees F) and 2 tablespoons olive oil with a wooden spoon until a shaggy dough forms. Cover with plastic wrap and let rise in a warm place until the dough rises slightly, about 1 hour.
- Using lightly floured hands, transfer the dough to a generously floured surface and knead several times until it just starts becoming smooth and elastic, about 1 minute (do not over-knead). Transfer to a lightly oiled large bowl. Tightly cover with plastic wrap and let rise in a warm place until almost doubled in size, about 1 hour. Meanwhile, place a pizza stone or inverted rimmed baking sheet on the lower oven rack and preheat to 500 degrees F.
- Brush two rimmed 13-by-18-inch baking sheets (not nonstick) with 3 tablespoons olive oil each. Place one piece of dough on each baking sheet. Prepare the pizzas one at a time: Cover the dough with plastic wrap, then press firmly with your hands to fill the baking
- Remove the plastic wrap and transfer the baking sheet to the hot pizza stone. Bake until the crust starts browning, about 10 minutes. Remove from the oven and carefully loosen the crust from the pan using a spatula. Top and bake or let cool, lightly wrap in plastic and set aside up to 8 hours.
PREBAKED PIE SHELL
Steps:
- In a large bowl, combine the flour with the lard, butter, and salt. Mix lightly with your fingertips until the dough forms grape-sized pieces. You should still be able to see chunks of fat.
- Stir in the iced water. Lightly knead, handling the dough as little as possible, until the dough forms a ball. Add a little more iced water if necessary. Transfer to a plastic bag and shape into a log. Cut into 2 pieces and place each inside an airtight bag. Seal the bags, pressing out any air, and chill for 1 hour or as long as 3 days. The pie dough can be frozen for as long as a week. Roll out half of the dough to a 12 inch round about 1/8 inch thick and use it to line a buttered and floured 10 inch pie pan, pressing the dough well into the bottom and up the sides without stretching. Chill for 30 minutes. Preheat the oven to 350 degrees. Cut out a circle of aluminum foil or parchment paper and fit it into the chilled pie shell. Fill with rice, beans, or ceramic pie weights and bake the pie shell for about 15 minutes, or until the edges are just golden and beginning to pull away from the sides of the pan.
- Remove the paper and the weights and return the shell to the oven to finish cooking for 5 to 10 minutes more. Cool on a rack.
PREMADE PIE CRUST
Before you begin, gather ingredients and equipment. Measure out ingredients.

- Chill the butter in the freezer for 15 minutes along with two identical 9-inch metal pie pans.
- In the bowl of a food processor, pulse the flour and salt to combine (about 4 pulses). Scatter the butter over the top of the flour and pulse until the texture looks mealy and no large lumps remain, 8 to 10 pulses. Add the ice water and pulse 5 times. At this point the mixture should just hold together when squeezed.
- Turn the dough out on a sheet of plastic wrap and draw the plastic up around it, squeezing and pressing the dough into a ball. Flatten into a disk approximately 1 inch thick and 5 inches in diameter. Refrigerate for 30 minutes.
- Remove the dough from the refrigerator, unwrap, and place on a lightly floured sheet of parchment paper. Lightly flour the disk then top with another sheet of parchment. Roll with a rolling pin, with the dough between the two pieces of paper, turning the dough a quarter turn after every few rolls until the disk is 12 inches in diameter. (If the dough seems too firm to roll at first, let it sit for 5 minutes at room temperature to soften.)
- Retrieve the pie pans from the freezer and place one upside down on the counter. Remove the top layer of parchment from the dough disk and lift the bottom layer of parchment with the dough and set on top of the inverted pie pan. Invert the second pan, place over the dough, and press down gently to shape the dough. Trim away any excess dough with a paring knife.
- Flip both pans right-side up, lift off the top pan, peel away the last piece of parchment, and place the pan back on top, thus sandwiching the bare dough between the two cold pans. Return to the freezer for a minimum of 30 minutes. (See Cook's Note.)
- When ready to bake, heat the oven to 300 degrees F. Position a rack in the center of the oven and a second one just beneath it.
- Place the dough-pan sandwich upside-down directly on the center oven rack. Place an empty sheet pan on the lower rack to catch any butter that might render out. Bake for 1 hour, then increase the oven temperature to 375 degrees F. Bake 15 minutes more.
- Carefully remove the crust from the oven and let cool for 20 minutes with both pie pans in place. Invert so the pie pans are right-side up, remove the top pan, and continue to cool to room temperature. At this point, fill the pie or place back between the pans and keep at room temperature for up to 3 days. (Do not wrap in plastic if storing at room temperature.)
