HIDDEN VALLEY RANCH SALAD DRESSING & SEASONING (COPYCAT)
My reverse-engineered recipe for this popular packaged dressing mix yields 6 batches. You can actually substitute chicken bouillon granules for vegetable bouillon granules, if you're not serving vegetarians. Xanthan gum, an emulsifier, is sold in health food stores.

Steps:
- WHISK all of the SPICE MILL INGREDIENTS into a medium bowl.
- FUNNEL half of mixture into a clean spice mill or coffee grinder; MILL for 5 seconds.
- TRANSFER mixture to a resealable container; REPEAT milling procedure with remaining mixture.
- ADD the SHAKE-IN HERBS to milled mixture in container; SEAL the container; SHAKE until thoroughly blended.
- STORE tightly sealed in a cool, dry place.
- FOR A SALAD DRESSING: In a bowl, combine 1 cup whole milk with 1 cup mayonnaise and 3 tablespoons of this seasoning. Mix well. Cover. Let stand in refrigerator 30 minutes to thicken. Stir before serving.
- FOR A CREAMIER SALAD DRESSING: In a bowl, combine 1 cup mayonnaise, 1/2 milk, 1/2 cup sour cream, and 3 tablespoons of this seasoning. Mix well. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
- FOR A CHIP DIP: In a bowl, combine 16 ounces sour cream with 3 tablespoons of this seasoning. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
- FOR A VEGETABLE DIP: In a bowl, combine 1 cup sour cream and 1 cup mayonnaise with 3 tablespoons of this dressing. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
- SERVE and enjoy!

RESTAURANT STYLE RANCH DRESSING
I have never been satisfied with store bought or ranch dressing recipes. This one is thick, fresh tasting and doesn't have that "mayonnaise" flavor. Tastes very similar to that dressing from that famed "aussie" steak restaurant if you add paprika and cayenne to it. This is my own recipe and I had a party and served it with fresh veggies and it got rave reviews. Hope you like it.

CLASSIC RANCH DRESSING
The original dressing served in the 1950s at Hidden Valley Ranch, a guest ranch near Santa Barbara, Calif., was made mostly from dry herbs and aromatics. To recreate that taste, this recipe is made with garlic powder instead of garlic, dried parsley instead of fresh, and so on. It makes enough seasoning mix for about 4 cups dressing; you can mix it, store it, then add dairy as needed. If you don't like the zip of mustard, try hot sauce or Worcestershire sauce instead - or simply omit for a milder taste. To make a thick dip instead of a pourable dressing, reduce the amount of buttermilk to 1/4 cup.

RANCH DRESSING FROM SCRATCH
Once you make this simple dressing you will never buy another bottle of the stuff. This is far superior even to the name brand. From hillbillyhousewife.com. I always use buttermilk but yogurt is ok too.

- Get out a medium sized bowl.
- Measure the mayonnaise into it.
- Gradually whisk in the buttermilk or yogurt.
- If you use powdered buttermilk, whisk in the powder first, and then slowly add a cup of water.
- Then add the seasonings. Whisk again.
- Or you can make it in the blender by putting everything into the blender and whirling until smooth.
- The mixture will be a little thin, but it will thicken on standing. Store in a pint size jar, makes 2-cups.
- Keep in the refrigerator for a few weeks. Tastes really good with yogurt by the way. This is my favorite way of making it. It tastes good with powdered buttermilk too, but the consistency is thinner than with yogurt.
- Note: If desired, you may add a tablespoon of Parmesan Cheese and/or a tablespoon of lemon juice to the dressing in addition to the seasonings above.
