Red Wine-Braised Chicken With Couscous image

Steps:

  • Place garlic in a small saucepan; cover with water. Bring to a boil. Reduce heat; simmer 2 minutes. Drain; set garlic aside.
  • Sprinkle chicken with pepper.
  • Heat oil in a large Dutch oven over medium-high heat.
  • Add chicken; cook 10 minutes or until browned, turning once.
  • Remove chicken from pan.
  • Increase heat to high; add wine to pan.
  • Cook until reduced to 1 cup (about 5 minutes). Remove from heat.
  • Stir in garlic, drumsticks, thighs, broth, tomato, and tomato paste.
  • Bring to a boil.
  • Reduce heat; simmer 5 minutes.
  • Add breast halves; cover and cook 30 minutes, turning chicken after 10 minutes. Remove chicken from pan; keep warm.
  • Increase heat to medium-high; add olives and capers to pan.
  • Cook, uncovered, 10 minutes, stirring occasionally. Return chicken to pan, turning to coat.
  • Cover and let stand 5 minutes.
  • Serve with couscous. Garnish with parsley, if desired.

Steps:

  • Combine garlic and olive oil in small saucepan with tight-fitting lid. Add red pepper flakes if desired. Cook briefly over medium heat, until garlic becomes fragrant.
  • Add couscous to pan. Saute over medium heat until golden brown, approximately 5 minutes.
  • Add capers, red wine, and water. Season with salt and pepper to paste.
  • Bring mixture to a boil. Cover and remove from heat; let stand 4-5 minutes. Fluff with a fork before serving.

Steps:

  • Bring stock to a boil in a heavy saucepan.
  • Stir in couscous.
  • Cover pan, remove from heat and set aside 15 minutes Combine balsamic vinegar, olive oil, mustard and lemon zest in a small bowl.
  • Mix well.
  • Transfer couscous to a large bowl.
  • Fluff with a fork.
  • Add tomatoes, red bell pepper, celery, cucumber, scallions and parsley to bowl with cooked couscous.
  • Mix gently.
  • Pour dressing over mixture and mix again.
  • Season with salt and pepper.
  • Can be served luke-warm or chilled.

Halloumi with chickpea salsa & couscous image

Steps:

  • Put the couscous in a bowl and pour over the hot stock. Cover with cling film, leave to stand and swell for 10 mins.
  • Make the salsa by mixing the chickpeas with the tomatoes, half the oil and vinegar, the finely chopped chillies and some of the chopped herbs. Season and arrange between 4 serving plates.
  • Heat a griddle pan or frying pan. Fry the halloumi for 2-3 mins each side, until golden and lightly charred. Fluff up the couscous with a fork and mix in the rest of the oil, vinegar and herbs with some seasoning. Pile onto the plates next to the salsa and top with the warm halloumi. Garnish with the sliced chillies.
