This is out of New Idea as a lunch box dish. They recommend it can be made up to 2 days ahead and then kept in an air tight container in the fridge. Times for preparation and cooking are estimates.

Steps:
- Cook rice in a large pan of boiling salted water until just tender (about 12-15 minutes or as per manufacturers instructions). Rinse under cold water.
- While rice is cooking -.
- Finely slice spring onions (scallions), finely chop ham, finely chop red capsicum (bell pepper).
- Drain corn kernels and rinse and drain. Drain pineapple (reserve juice for another use).
- Combine cooked rice, spring onions, ham, capsicum, carrot, corn and pineapple in a large bowl.
- Combine soy sauce and honey in a small bowl, whisk until blended.
- Pour sauce mixture over salad until well combined.

LEMON-HERB RICE SALAD

- Remove 2 wide strips zest from 1 lemon with a vegetable peeler. Combine 1 strip zest with the vegetable oil in a small saucepan over medium heat and cook until the edges of the zest turn slightly golden, about 5 minutes. Let the lemon oil cool.
- Meanwhile, cook the rice as the label directs, adding the remaining strip lemon zest to the water. Transfer the rice to a large bowl, discarding the zest, and fluff with a fork. Let cool to room temperature.
- Meanwhile, make the dressing: Juice both lemons into a medium bowl. Add the vinegar, brown sugar, 1 1/4 teaspoons salt and 1/2 teaspoon pepper and whisk until the sugar dissolves. Discard the zest from the lemon oil, then whisk the oil into the dressing. Add the onion slices and let marinate 15 minutes.
- Add the carrot, cucumber, peanuts, cilantro, mint, basil and watercress to the bowl with the rice. Add the dressing mixture and gently toss. - For the rice: Place the rice, 3 cups water, and a pinch of salt in a pot, cover and bring to a boil. Reduce the heat and cook on low until tender, about 20 minutes. Turn the rice out onto a sheet tray and let it cool completely. Next, combine the rice, peas, red bell pepper and red onion. Toss gently.
- For the dressing: In a small bowl, add the rice wine vinegar, a small pinch salt and a few turns of freshly ground pepper. Mix together and slowly drizzle in the vegetable oil and then the sesame oil.
- Pour the dressing over the rice and mix until the rice is thinly coated. Taste, and re-season if necessary.
WILD RICE SALAD

- Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes. While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. Taste for seasonings and serve at room temperature.

- Add frozen peas into rice while it's still hot. (I've never really measured, just sprinkle them in as you see fit).
- Chop onions and green pepper and drain the can of shrimp.

- Boil a kettle and pour the water over the peas in a small bowl. Leave them to defrost, then drain. THE WORLD OF RICE SALADS
This easy basic recipe for rice salad comes from Mark Bittman's How to Cook Everything Vegetarian. Turning it into an side dish for Japanese, Mexican, or Indian dinners is as simple as following one of the many variations.

- Put the rice and all the vegetables in a large bowl. Drizzle with vinaigrette and use two big forks to combine, fluffing the rice and tossing gently to separate the grains.
- Stir in the parsley, taste, and adjust the seasoning or moisten with a little more dressing. Serve at room temperature or refrigerate for up to a day, bringing the salad back to room temperature before serving.
- Variations:
- Rice Salad, Japanese Style: Use brown or white short-grain rice. Halve the amount of celery and carrot and finely chop them or shred them on a grater. Add 1 cup cubed firm tofu (preferably baked). Instead of the vinaigrette, toss with 1/4 cup or so of Simple Miso Dipping Sauce (made by whisking together 6 tablespoons miso paste, 3/4 cup warm water or sake, 1 teaspoon sugar, 1 tablespoon mirin or honey, 1 tablespoon rice vinegar plus more to taste, and salt to taste). Instead of the parsley, crumble 2 sheets of nori over the rice salad and sprinkle with 2 tablespoons black or white sesame seeds.
- Rice Salad, Mexican Style: Long-grain or medium-grain, white or brown, all work well here. When blending the vinaigrette, add 1 tablespoon chili powder and 2 tablespoons Mexican crema or mayonnaise. Instead of celery and carrot, add 1 cup chopped fresh tomato. Substitute chopped fresh cilantro for the parsley and, at the same time, add 2 chopped hard-cooked eggs and chopped jalapeño chiles if you like. Serve with lime wedges.
- Rice Salad, Indian Style: Use brown or white basmati rice. When making the vinaigrette, use rice wine vinegar, replace the oil with coconut milk, and add 1 tablespoon curry powder, or more to taste. Instead of the bell pepper, celery, and carrot, add 1/2 cup each cubed cooked potato, cooked cauliflower florets, and green peas (cooked frozen are fine). Substitute cilantro for the parsley.
- Citrus Rice Salad: Use any rice. Instead of red wine vinegar, make the vinaigrette with freshly squeezed citrus juice-choose from lemon, lime, orange, blood orange, tangerine, pink grapefruit, or a combination. Whatever you use, add 2 tablespoons of the grated zest and 1 tablespoon of sugar or honey to the blender. Do not include the scallion or the vegetables. (You might want to use a little less dressing.) Instead of the parsley, use mint if you like. A handful of chopped almonds or pecans make a nice addition.
- Tomato Rice Salad: Use any kind of brown or white rice. When making the vinaigrette, eliminate the vinegar and add 1 medium tomato to the blender. Instead of the scallion and other vegetables, add 2 cups chopped fresh tomato (a mixture of heirloom varieties is nice).Instead of the parsley, use chopped fresh basil or mint, or 1/4 cup chopped fresh chives, chervil, dill, or about a tablespoon of fresh thyme leaves.
MINTY SUMMER RICE SALAD

- Drop the rice into a pan of boiling salted water and cook for 10 minutes. Toss in the asparagus and cook for a further 3-4 minutes until the rice is completely cooked and the asparagus is only slightly crunchy. Drain into a sieve and hold under the cold tap until cool.

MICROWAVE RICE SALAD
I am a bit nervous about posting this recipe. I suppose its because I have changed it so much over the years, to suit the family, and its in my head now for so long and not on paper to copy out! When I first got married and my parents gave us a microwave for a wedding present.......so mum and I went to classes to learn how to use a microwave. This was the first recipe we made, and I have made it ever since, with many changes over the years to suit kids and relations! It is such a versatile recipe, the basics are there and you just add what you like! Because I make this out of my head (apart from the basics) I am using what I add as ingredients, and if the ingredients need cooking, I just nuke em for a few minutes...such as th onion and peas.Saffron is good to get a yellow colour to the salad. I have served this rice both hot and cold, and it has never failed. One thing I never leave out is the onion and eggs., but its all up to you! ;-) I hope you can understand this recipe, its hard when you have been making something for years and try to put it down pat!

- Rinse uncooked rice off in strainer unser cold water, until water runs clear.
- I actually put rice in a jug of water let sit a few minutes stir and then strain off.
- In a microwave safe bowl add crumbled stock cube, rice and butter.
- Microwave rice for 3 minutes, remove and stir so as stock cube and butter dissolves, and mixes inches.
- Place bowl with a cover in microwave for 8 minutes on high, when finished remove and leave rice stand (untouched) for 10 minutes. The rice should be perfectly cooked after standing.
- Now add extra ingredients, and seasoning's and serve cold or hot ~
- Frozen peas and onions can be microwaved for a few minutes if adding.
- Other ingredients I have added or substituted are (drained no added water to the mix). I always use onions to the mix and usually boiled eggs diced.
- Pineapple.
- Cooked chicken.
- Tuna
- Capsicum (diced).
- Shallots (diced finely).
- Carrots (diced).
- Beans (diced).
- Small cooked prawns (diced).
- Saffron (1/4 teaspoon) for colour (makes salad yellow in colour) The list is endless as to what you can use, just make sure the ingredients dont carry too much water to make rice gluggy!
