Roasted Mission Figs with Honey image

Steps:

  • Preheat the oven to 425°F. Rinse the figs and pat them dry, then cut off the stems and, without cutting through the base, halve them from top to bottom. Set the figs upright in a dish just big enough to hold them snugly.
  • Melt the butter in a small skillet with the salt, honey, and cinnamon, then spoon it over the figs.
  • Bake until the sauce is bubbling and the fruit is heated through, about 15 minutes. Serve warm.

12 to 16 plump figs
2 tablespoons unsalted butter
Tiny pinch of salt
2 tablespoons honey, such as lavender honey
Pinch of ground cinnamon

Honey-Roasted Salted Figs image

Steps:

  • Preheat the oven to 400 degrees. Lightly brush a rimmed baking sheet with olive oil. Whisk 1/4 cup extra-virgin olive oil and 1/4 cup honey in a large bowl. Add 10 ounces each of dried Turkish and Black Mission figs; toss to coat.
  • Arrange figs in a single layer on prepared sheet. Sprinkle with 1/2 teaspoon coarse salt. Roast until fragrant and caramelized, 12 to 15 minutes. Immediately loosen figs from sheet with a metal spatula. Let figs cool slightly, loosening again after 5 minutes. Transfer to a platter, and serve with assorted grapes.

Roasted Figs with Baby Greens and Honey Vinaigrette image

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut a small "X" in the top of the figs and squeeze it gently to crown it slightly. Put the figs on a sheet pan, drizzle them with olive oil and season with salt and pepper. Bake until the figs are soft and caramelized, about 15 minutes.
  • Put the mixed greens and chopped herbs in a bowl, drizzle with a little olive oil and season with salt and pepper; toss gently with your hands.
  • In a small bowl, combine the honey, warm water, and lemon juice; whisk with a fork to combine.
  • To serve, divide the greens between 2 plates, mound the chunks of gorgonzola cheese on the side of each and place 2 roasted figs in the center of the salad. Drizzle the whole thing with the warm honey vinaigrette.

4 small fresh black mission figs, stemmed
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 tablespoons orange blossom honey
1 tablespoon warm water
1/2 lemon, juiced
2 cups baby mixed greens

Vanilla Bean-Roasted Figs with Wildflower Honey-Vanilla Ice Cream image

Steps:

  • In a saucepan, combine the milk, cream, and 2 tablespoons of the sugar and bring to a simmer.
  • Meanwhile, in a mixer or other metal bowl, whisk the egg yolks and the remaining 2 tablespoons sugar until thickened and lightened in color. Gradually whisk in one third of the warm milk mixture to temper the egg yolks. Return the mixture to the saucepan and stir over medium heat until the custard has thickened and coats the back of a wooden spoon. Pour the custard into a bowl set in an ice-water bath and stir in the honey to combine. Let the mixture cool to room temperature, then strain it into a container and refrigerate at least 5 hours, or overnight (for the creamiest texture).
  • Freeze the cold custard in an ice-cream machine. Remove to a covered container and freeze for several hours, or until hardened.
  • Preheat the oven to 400º F.
  • Wash and dry the figs. Slice off and discard the tops. Make a small slit in the center of the top of each fig and insert a section of vanilla bean.
  • Melt the butter over medium heat in an ovenproof skillet large enough for all the figs to stand in one layer. Stir in the sugar to dissolve. Stand the figs in the butter and add any remaining vanilla beans to the pan. Place the pan in the oven for 10 minutes to heat the figs. The figs can be served warm or at room temperature.
  • Place a scoop or quenelle of ice cream into each of six bowls. Arrange 3 of the figs (still with the vanilla beans) around each scoop. Drizzle the syrup remaining in the pan around the plates. Serve immediately.

2 cups milk

4 vanilla beans, split and cut into 2-inch pieces

When I lived in California, I couldn't wait until the farmer's markets had figs...big, juicy, amazing to eat! They are hard to find in Colorado, and are less flavorful than the ones in CA. So I came up with this little appetizer to showcase some of my favorite ingredients.

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange fig halves, cut sides up, on a baking sheet. Top each fig half with goat cheese; lay prosciutto strips atop goat cheese layer.
  • Broil figs in the preheated oven until prosciutto is crisp and goat cheese is melted, 3 to 5 minutes.
  • Transfer the warm figs to a serving platter and drizzle with honey.
