SALVADORIAN BAKED FISH

My grandmother has been making this recipe for our family for as long I can remember. This will work on any white fish. To our family, when it comes to cooking fish, it needed to be perfect. Believe me, if you only knew! This recipe is a real winner.

Salvadorian Baked Fish image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish with 1 teaspoon olive oil.
  • Rub remaining olive oil over the fish fillets and place into the baking dish. Season fish with garlic powder, salt, and black pepper; top with minced garlic. Drizzle lime juice over the fish. Arrange lemon slices, tomato slices, onion slices, and bell pepper slices atop the fish. Cover baking dish tightly with aluminum foil.
  • Bake in preheated oven until fish flakes easily with a fork, 30 to 40 minutes.

BAKED PARMESAN FISH

Healthier and tastier way to serve fish. I have used flounder, catfish, grouper, perch and tilapia with great results.If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did.

Baked Parmesan Fish image

Steps:

  • Beat egg and milk in a shallow bowl and set aside. In a zipper bag combine breading ingredients.
  • One at a time dip fillets in egg, shake off excess and turn or shake in breading in bag.
  • Bake uncovered on an oiled baking sheet at 350 degrees for about 25 minutes or until fish flakes easily with a fork.
  • Can be served with lemon wedges if desired.

16 ounces fish fillets
1 egg
2 tablespoons milk
1/3 cup parmesan cheese, grated
2 tablespoons flour
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper

No, no tortillas were harmed in the making of this cake. It is similar to a pound cake and gets its unique flavor from a small amount of parmesan cheese. I was first introduced to this cake by my friend Rina and was so happy when I stumbled upon the recipe. It is especially good with coffee for breakfast. From Gourmet

Salvadorian Quesadilla Cake image

Steps:

  • Preheat oven to 400°F with rack in middle. Line bottom and sides of 9x5 loaf pan with parchment paper.
  • Whisk together flour, baking powder, and salt. Beat butter and sugar in another bowl with an electric mixer at medium-high speed until pale, about 1 minute. Beat in eggs, sour cream, and cheese.
  • Reduce speed to low and mix in milk. Add flour mixture and mix until just combined.
  • Transfer batter to pan and smooth top. Sprinkle with sesame seeds (if using). Bake until a wooden pick or skewer inserted into center of cake comes out clean, 30 to 40 minutes.
  • Cool to warm in pan, 20 to 30 minutes. Turn cake out onto a rack. Serve cake slightly warm or at room temperature.
  • Cooks' note:
  • Cake keeps in an airtight container at room temperature 3 days.
