SARAH'S OVEN BAKED CHICKEN

This is how my husband and I make simple chicken, though it's best with fresh chicken but frozen chicken, when thawed, works just as well. We use soy sause as a base for the spices and brush it on with a pastry brush, but you can use a bag if you need to.

Sarah's Oven Baked Chicken image

Steps:

  • Preheat oven to 375 degrees F& spray either a broiler pan, cookie sheet with sides, or a shallow casaroll dish.
  • Trim the fat and skin off of the chicken breasts.
  • You can place all the ingrediants in a bag and shake them together, or mix them with some water or soy sauce to brush onto the chicken.
  • Make sure the spices are evenly distributed or you'll end up with one lemony peice and one garlicky piece.
  • Bake in oven for 10 minutes then turn over and back until done, normally 10 minutes for my oven.
  • Serve with some rice or even mac& cheese and enjoy!

2 -3 skinless chicken breasts
1 teaspoon pepper (I use a mix of black, red & white)
2 teaspoons lemons, rind of or 2 teaspoons orange rind
1 -2 teaspoon garlic or 2 cloves garlic, minced well (to taste)

Steps:

  • In a large bowl mix together the buttermilk with the hot sauce. Add chicken pieces and turn to completely coat. Let sit in the refrigerator for 30 minutes.
  • Preheat oven to 350 degrees F.
  • In a large zip top bag combine the breadcrumbs, poultry seasoning, and salt and pepper, to taste. Remove chicken pieces from buttermilk and drain excess liquid. Place the chicken in breadcrumb mixture a few pieces at a time and shake to coat completely. Remove chicken from bag and place on a nonstick baking sheet and bake for 30 to 40 minutes until breadcrumbs are golden brown and chicken reaches an internal temperature of 175 degrees F.

2 chicken wings
2 cups panko breadcrumbs
1 tablespoon poultry seasoning
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350.
  • Open pie crusts and let sit out to soften.
  • Spray pie pan with nonstick cooking spray.
  • In large mixing bowl - mix soup, milk, honey, vegetables together.
  • Unroll 1 crust into pie dish.
  • Pour in mix.
  • Unroll 2nd pie crust on top.
  • Pinch edges together.
  • Poke 5-8 knife marks in center of crusts.
  • (brush top crust with a beaten egg white or spray the top crust with cooking spray).
  • Bake at 350 for 75 minutes or until golden brown.
  • Remove from oven and enjoy.

10 1/2 ounces low-fat cream of chicken soup (Campbells 98% fat free)
1/3 cup low-fat milk
2 tablespoons honey
1 (16 ounce) bag frozen vegetables
1 pie crust
1 -2 cup cooked chicken (I like to use rotisserie chicken)

  • Heat oven to 350ºF.
  • Place chicken pieces and carrots in large roasting pan; drizzle with dressing.
  • BAKE 45 to 50 min. or until chicken is done (165°F) and carrots are tender.

SARAH'S SUPER FAST CHICKEN PARMESAN

This may not be the authentic way of cooking this dish but it is comfort food for me and it is quick and easy. My (soon to be) British mother in law loves this dish and requests it every time she comes to stay with us. I even like this leftover the next day and used to make a naughty but nice sandwich.

Sarah's Super Fast Chicken Parmesan image

Steps:

  • Preheat oven to 400 degrees.
  • Pour just enough of the spaghetti sauce into the bottom of an oven dish so that the bottom is coated.
  • Place the chicken patties in the dish and arrange the mushrooms on top of the patties.
  • Pour the rest of the spaghetti sauce over the chicken.
  • Sprinkle on the Parmesan cheese and then the Cheddar cheese.
  • Bake in the oven for about 20 to 30 minutes or until the cheese is really well melted and the chicken patties are cooked through.

SARAH'S CHICKEN LASAGNA

This recipe is very different from the tomato based lasagna. It is a creamy lasagna, and very good. This freezes well, and can be prepared in advance.

Steps:

  • Cook noodles in a large pot of boiling water until done. Rinse, and drain. Set aside.
  • In a medium saucepan, saute green pepper and onions in butter or margarine over medium heat. Stir in undiluted soup, milk, mushrooms, pasteurized cheese, pimento, and basil.
  • Place half of the noodles in 13 x 7 x 2 inch baking dish. Layer with half of the cream sauce, 1/2 cottage cheese, 1/2 diced chicken, and 1/2 Parmesan cheese. Repeat layers.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes.
