SAUSAGE PIZZA LOAF

Savory slices of this bread make a favorite Saturday night meal for my family. Just like pizza, it can be eaten as a fun finger food. Guests can't stop nibbling when I serve it at parties. Plus, it's good warm or cold.

Steps:

  • In a large skillet, cook the sausage, onion and peppers over medium heat until the meat is no longer pink; drain. Combine crust mixes; prepare according to package directions. With greased fingers, press onto the bottom of a greased 15x10x1-in. baking pan., Combine the sausage mixture, mozzarella cheese, pepperoni and egg; spread over dough to within 1/2 in. of the edges. Sprinkle with the Parmesan cheese, oregano and garlic powder. , Roll up jelly-roll style, starting with a long side; pinch seams to seal. Arrange seam side down on pan and shape into a crescent. Bake at 400° for 30 minutes or until golden brown.

  • Divide dough in half. With greased fingers, pat each half onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° until lightly browned, 10-12 minutes. Meanwhile, in a large skillet, cook the sausage over medium heat until no longer pink; drain., Spread pizza sauce over crusts. Top with cheese, onion, green pepper, mushrooms and sausage. Bake at 400° until golden brown and cheese is bubbling, 12-15 minutes. If desired, top with grated Parmesan cheese, crushed red pepper flakes and fresh oregano leaves. , Freeze option: Wrap unbaked pizzas and freeze for up to 2 months. To use, unwrap and place on pizza pans; thaw in the refrigerator. Bake at 400° until crust is golden brown, 18-22 minutes.

Steps:

  • Preheat the oven to 250 degrees F (convection) or 275 degrees F (conventional).
  • Blend pork, beef, cream, ketchup, breadcrumbs, ice water, salt, lemon juice, ground mustard, dehydrated onion, smoked paprika, white pepper, sugar, garlic powder and eggs in a food processor until well blended.
  • Turn out into a bowl and add the Cheddar, Swiss cheese, olives, peppers and tomatoes (or add your favorite pizza toppings like salami, pepperoni, mushrooms...).
  • Pack into a 9-by-5-by-3-inch loaf pan.
  • Bake until internal temperature reads 160 degrees F, about 2 hours.

  • Heat oven to 425°F. Lightly spray large cookie sheet with cooking spray.
  • In 12-inch skillet, cook sausage over medium-high heat 8 minutes, stirring occasionally, until no longer pink. Push sausage to edges of skillet; add 1 tablespoon of the oil. Add onion and garlic; cook 5 minutes, stirring occasionally, until onion is softened. Remove from heat; stir in pizza sauce, oregano, pepper flakes and salt.

  • Cook and stir sausage in a skillet over medium heat until crumbly, evenly browned, and no longer pink, 8 to 10 minutes. Drain and discard any excess grease.

Onion and Sausage Pizza image

Steps:

  • Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
  • Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

For variation, you can add mushrooms, peppers, chopped olives or other vegetables, as desired, along with the garlic & onion. Cooking time is based on using a french loaf vs. individual rolls.

French Loaf Pizza (With Italian Sausage) image

Steps:

  • Preheat oven to 300°F
  • In skillet, over medium heat, brown sausages. Remove with slotted spoon, set aside & keep warm; drain excess fat.
  • Sauté garlic & onion 2 - 3 mins, until soft.
  • Add tomatoes, tomato paste, basil, oregano & pepper. Simmer for 15 mins, stirring occasionally.
  • Slice off the top of the loaf of bread (or rolls) lengthwise. Scoop out the centre of the loaf leaving a 1" shell.
  • Spread ½ of the tomato mixture into the hollowed loaf. Layer the sausage over the tomatoes. Top with remaining tomato mixture. Sprinkle the mozza & cheddar cheese on top & replace the top of the loaf.
  • Double wrap loaf in heavy aluminum foil & place on a cookie sheet.
  • Bake for 1 ½ hrs (or 1 hr for dinner rolls).
  • Remove from oven & let set for 20 minutes.
  • To serve, cut loaf into 2" slices.
