- For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
- For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
- Toss the salad with the vinaigrette before serving.
SIMPLY ELEGANT SALAD WITH BALSAMIC RASPBERRY VINAIGRETTE
I came up with this salad one day and loved it! Now I bring this salad to dinner parties and it's always a huge hit. The two different vinaigrettes mixed together are a perfect combination of sweet, tart and tangy. For dinner parties with people I don't know well I usually leave the almonds and dressing on the side in case anyone has food allergies; only once has anyone passed on the almonds and dressing. This salad is also great topped with grilled chicken to make the salad a complete dinner.

- In a medium sized bowl mix the two vinegarettes and black pepper together, stir until well blended. Set aside.
- In a large bowl toss lettuce, cuccumbers, onions, grapes, tomatoes and almonds.
- Add to veggies the desired amount of dressing, cheese, and more almonds. Enjoy!

WEDGE SALAD WITH RASPBERRY-CHOCOLATE VINAIGRETTE

- For the croutons: Preheat the oven to 375 degrees F. Drizzle the bread with olive oil. Using a small heart-shaped cookie cutter, cut out pieces of the bread and place on a baking sheet. Bake until crispy and golden, 8 to 10 minutes. Set aside to cool.
- For the vinaigrette: In a blender, combine the raspberries, oil, chocolate-balsamic vinegar, honey, salt and pepper. Blend until smooth.
- Place the wedges of lettuce on 4 plates and drizzle with the vinaigrette. Top with the chopped chocolate and croutons before serving.
BRUNCHTIME SALAD WITH CREAMY RASPBERRY VINAIGRETTE
Steps:
- Arrange salad mix on a serving platter. Arrange the pre-cut fruit atop the salad greens.
- For the dressing, combine Italian dressing, yogurt, and thawed raspberries in a blender and puree until smooth.
- Spoon desired amount of dressing over salad and garnish with slivered almonds.

- Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
- Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

This salad is served at every family function from B-days to Thanksgiving! I don't know the origin of it, my mom started making it from when we were all very little. It's a MUST HAVE at my house! Don't substitute the ingredients, though, it won't turn out. Been there, tried it, failed, lol. It's awesome just as is!!!!

- Note: The bottle says equivilant to 1 1/2 lbs bacon and do NOT sub immitation; You can also use the new kind that comes in a sealed pouch, use 3/4 to 1 cup, depending on how much bacon flavor you like.

- In a small bowl, whisk together vinegar, and next 4 ingredients. Slowly add oil, whisking to combine.
- Divide mixed salad greens evenly among salad plates. Top with raspberries and Spicy Pecan Halves. Drizzle with raspberry vinaigrette.
- Spicy Pecan Halves:.
- 1/2 c butter.
- 3 tbsps sugar.
- 1/2 tsp salt.
- 1/4 tsp cayenne pepper.
- 1 (6oz) pkg pecan halves.
