Steps:

  • For the graham cracker crust: Preheat the oven to 350 degrees F. Line two standard 12-cup muffin tins with paper liners.
  • In a small bowl, stir together the graham cracker crumbs, butter and sugar until well combined. Press a heaping tablespoon of the crust mixture into the bottom of each muffin cup and bake until golden and just set, 5 to 7 minutes. Set aside to cool.
  • For the cupcakes: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Add the buttermilk, water and oil and whisk to combine. Add the eggs and vanilla extract and whisk until smooth. Divide the batter among the muffin cups, filling them about two-thirds full. Bake until a toothpick inserted into the center comes out with a few crumbs attached, 12 to 15 minutes.
  • Let cool in the tins on a wire rack for about 5 minutes, then remove the cupcakes from the tins and allow to cool completely.
  • For the marshmallow frosting: Combine the egg whites, sugar and cream of tartar in a heatproof mixing bowl set over a pan of simmering water. Whisk constantly until the sugar has dissolved and the egg whites are warm and smooth to the touch, 3 to 5 minutes. Transfer to the bowl of a stand mixer fitted with the whisk attachment and beat on low speed, gradually increasing to medium and then finally up to high. Beat until stiff, glossy peaks form, 7 to 10 minutes. Turn the mixer to low and whisk in the vanilla.
  • Spread the frosting on the cupcakes. With a handheld pastry torch, lightly brown the frosting. Decorate each cupcake with a graham cracker piece and a shard of chocolate.

  • Preheat the oven to 350°F (180°C). Line 16 standard-size muffin cups with paper liners.
  • Using a 1-tablespoon scoop with a spring release, scoop 1 tablespoon of brownie batter into the bottom of a prepared muffin cup. Stack 2 halves of a Godiva® Signature Salted Caramel Milk Chocolate Mini Bar horizontally in the center of the cup, then cover with 2 more tablespoons of brownie batter. Repeat with the remaining 15 cups, or until the brownie batter is used up.
  • Bake the brownie cupcakes for 22-25 minutes, or until set.
  • Remove the brownie cupcakes from the oven and turn the oven to broil.
  • Place a marshmallow upright on top of each cupcake, then return to the oven and broil for 1-2 minutes, or until the marshmallows are soft and browned. Watch closely so the marshmallows don't burn.
  • Remove the cupcakes from the oven and, using a clean spoon, gently press the center of each marshmallow straight down so the marshmallow spreads to cover most of the top of the cupcake.
  • Remove cupcakes from the muffin tins and transfer to a wire rack to cool completely.
  • Garnish each cupcake by gently pressing a graham cracker rectangle and a Godiva® Signature Dark Chocolate Mini Bar half through the marshmallow into the top of the cupcake.

  • Heat oven to 350°F. Place foil baking cup in each of 12 regular-size muffin cups; spray bottoms with cooking spray.

  • Preheat oven to 350 degrees.
  • Grease 9 x 13 pan using shortening.
  • Line 9 x 13 pan with graham crackers until bottom is completely covered (You will need to cut a few to fit, yes you CAN cut graham crackers with a knife!)
  • Prepare brownie mix according to directions for cake-like brownies.

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-by-13-inch cake pan with parchment, allowing it to hang over the sides. Coat with cooking spray.
  • Whisk together the milk and eggs in a medium bowl. Fold in the brownie mix until you have a smooth mixture. Stir in the butter.
  • Pour 2 cups of the batter into the prepared pan and spread to even out the surface. Drop spoonfuls of the marshmallow cream on top of the batter and use a wooden skewer or knife to create a swirling pattern. Pour the remaining brownie batter over the top. Arrange the segments of chocolate bar on top. Next, sprinkle over half of the graham crackers.
  • Bake for 30 minutes, then remove from the oven and sprinkle over the mini marshmallows. Bake until the marshmallows start to brown a little, an additional 10 minutes, then remove from the oven and allow to cool for about 5 minutes. Drizzle over the salted caramel. Steps:

  • Preheat oven to brownie mix package recommendations.
  • In an 8x8 or 9x13 baking pan. OR use cupcake baking tins lined w/ cupcake papers. Spray the paper with non-stick spray if desired.
  • Line with foil for easier removal. Spray with non-stick spray.
  • Line pan with graham crackers. I have used both plain and cinnamon and the cinnamon really impart a wonderful flavor.
  • Prepare brownie mix according to package directions. Pour mix over top of graham crackers. You can use two layers of graham crackers if you wish.
  • Bake according to brownie mix instructions. check for doneness.
  • Immediately upon completion of baking, top with a layer of mini marshmallows. Return to oven to melt and toast. NOTE: I have used the broiler at this pint to brown the marshmallow tops up nicely. Watch carefully!
  • Cool completely before lifting 'smores out of the pan. Peel away the foil and slice into squares with sharp knife dipped in hot water or sprayed with a non-stick oil spray. Wipe between cutting slices and re-dip or respray again. Using a pastry scraper was also suggested, use by pressing down and not dragging through the brownie. ***Cutting through the sticky marshmallow is a trick. Be patient!

  • Preheat oven to 350°. Start with graham crackers or graham cracker crumbs. To make the crumbs, process the graham crackers in a food processor (or with a rolling pin in a zipper bag). Add melted butter and sugar and combine. This will take about a minute!
  • Make the brownie mix. First melt butter and the chocolate chips in the top of a double boiler or a heat safe bowl over a saucepan with two inches of hot simmering water. Chocolate can burn, so this method achieves the best results. Once, the chocolate and butter on the bottom is halfway melted, take off the heat and stir to combine. The mixture will naturally melt together. Stir in the sugar. In a separate bowl, combine the flour, cocoa powder and salt. When chocolate mixture is cool to touch, stir in eggs quickly (so you don't have scrambled eggs). Last, add the dry ingredients and combine, just until the white from the flour disappears. Do not overmix.
  • Assemble by first lining a muffin tin with cupcake liners. Scoop or spoon a heaping Tablespoon of the graham cracker mix into the liner and tamp down with a small flat surface like a bottle cap. I used a cocktail bar muddler. Then using an ice cream scoop, scoop the brownie mix onto the graham cracker layer filling the cupcake liner half full or more. Bake cupcakes for 15-20 minutes or until set.
