SMOTHERED MEATBALLS
These tasty meatballs include green peppers, onions and Italian-style bread crumbs baked in a golden mushroom sauce. The recipe is a creation of my own.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large mixing bowl, combine ground beef, green pepper, onion, eggs, seasoned bread crumbs, salt and pepper. Mix thoroughly.
- Shape the meat mixture into large meatballs about 2 inches in diameter. Place about 1 inch apart on a large, shallow baking sheet. Bake in a preheated oven for 30 minutes. While meatballs are baking, start the sauce.
- In a 9x13 inch baking dish, mix the soup, mushrooms, sour cream, milk, browning sauce, salt and pepper to taste. Blend well.
- When the meatballs have finished baking, remove them from the baking sheet and place them into the soup mixture. Stir in the meatballs to coat. Return to the preheated oven and bake for 20 to 30 minutes, or until sauce begins to bubble.

SMOTHERED POTATOES
I usually make these with salmon patties and biscuits. You can use it with almost anything.

Steps:
- Season potatoes with salt and pepper to taste. Place flour in a shallow dish or bowl; coat potatoes with flour. Add onion to potato/flour mixture and set aside.
- Heat oil in a medium skillet over medium-high heat. When oil is hot add potato/onion mixture and cook until golden brown, stirring occasionally to prevent burning.
- When mixture has browned, reduce heat to low, add water and cover skillet. Simmer for 20 minutes, or until tender.

Steps:
- Cook sausage, turkey and onion in a 10-inch nonstick skillet over medium heat about 10 minutes,stirring occasionally until sausage is done; drain.
- Stir in zucchini, parsley, basil and garlic.
- Cover and cook 3 minutes.
- Stir in tomatoes.
- Cook egg noodles as per package directions and drain.
- Toss noodles,salt and pepper.
- Top noodles with sausage mixture.

DRUNKEN NOODLES
Steps:
- Cook the noodles in large pot of boiling salted water according to package directions. Drain and set aside.
- Meanwhile, heat the oil in a large, deep skillet over medium-high heat. Add the garlic and chili paste; cook for 30 seconds. Add the chicken, fish sauce, soy sauce, sugar and bell peppers. Cook, stirring, until the chicken is cooked through, 4 to 6 minutes.
- Add the noodles and tomatoes and toss to coat. Transfer to a large platter, sprinkle with basil and serve.
