Strawberries with Balsamic Vinegar image

Steps:

  • Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
  • Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.

4 pints (8 cups) fresh strawberries, sliced thick
5 tablespoons balsamic vinegar
2 tablespoon sugar
1/4 teaspoon freshly ground black pepper
2 pints vanilla ice cream, for serving
Freshly grated lemon zest, for serving

Fresh Strawberries with Balsamic Vinegar and Basil image

Steps:

  • In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.

2 teaspoons freshly ground black pepper
1 cup fresh basil leaves, torn into small pieces and loosely packed
10 cups strawberries, trimmed and halved (4 pounds whole berries)

Strawberries with Balsamic Vinegar image

Steps:

  • Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4 hours. Just before serving, grind pepper over berries.

Chicken Scaloppine With Balsamic Vinegar and Basil image

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour, shaking off excess. Heat olive oil in 12" skillet over a high flame. Add chicken in a single layer. Cook until golden on bottom, about 2 minutes; turn. Cook on other side until golden, about 2 minutes. Remove to platter and cover with foil to keep warm. Add shallots and garlic to skillet, cook, stirring for 1 minute. Add chicken stock and reduced over high heat for 1 minute, scraping up any browned bits. Add balsamic vinegar and cook until sauce reduces and becomes syrupy (about 1 minute). Stir in basil, pour over chicken and serve.

Basil and Balsamic Green Bean Salad image

Steps:

  • Blanch the green beans in salted boiling water for one or two minutes. Strain then plunge into an ice bath. Strain again, and spread them on a towel to dry while you prep the other ingredients.
  • Combine all ingredients through the basil, reserving 1/4 cup toasted pine nuts.
  • Whisk vinegar, oil, garlic, dijon mustard and sugar until emulsified. Toss with green bean mix. Let the salad marinate for up to an hour, top with the remaining pine nuts. You can serve it immediately, but the longer it marinates, the better it will taste. It was even more delicious for lunch the next day.

SUMMER BERRIES W/ BALSAMIC AND BASIL image

Steps:

  • Quarter the strawberries and cut the blueberries in half (crosswise, not through the stem ends). Mix the strawberries, blueberries and whole raspberries gently together in a bowl and reserve. In a small bowl, mix together the balsamic vinegar, orange juice, sugar, clove and vanilla bean seeds. Pour over the berries. Fold in the basil carefully. Let the mixture stand to steep about 10-15 minutes. Divide the berries into chilled or frosted martini glasses. Drizzle any remaining juice over the berries. Top each glass with a dollop of whipped cream or a scoop of ice cream and garnish with a small sprig of basil.

1 cup fresh blueberries
2 T balsamic vinegar
1 t freshly squeezed OJ
2 t sugar
½ vanilla bean "seeds"
Small pinch of ground clove
1 T chopped Thai basil leaves
