I found this recipe while browsing for roast recipes the other day. This delicious and EASY recipe had my family asking for THIRDS!

Super Yummy Top Round Roast and Potatoes image

Steps:

  • Pound the heck out of (or stab, as I did) the roast. Place unseasoned roast in deep baking dish.
  • Quarter potatoes and place all around roast (do not peel).
  • Sprinkle golden onion soup mix all over roast and potatoes.
  • Add cola and cover loosely with foil.
  • Bake at 300 degrees for 3-4 hours. Let sit 15 mins before slicing (against the grain). Spoon juices from pan over slices of beef.

Steps:

  • Pour the red wine and water into the slow cooker crock; set aside.
  • In a small bowl, combine the herbs, pepper, salt, and olive oil; stir to combine. Using clean hands, rub the oil and herb mixture all over the beef roast. Place the roast into the slow cooker crock. Sprinkle the garlic and onions aroudn the raost and lay the bacon strips over the top of the roast.
  • Cover and cook on LOW for 10 hours.
  • Before serving, flip the roast over in the slow cooker, then turn the slow cooker off and let the roast rest in the slow cooker for about 15 minutes. Remove roast to a platter and let it drain for a few minutes.
  • To serve, use a sharp knife to slice the meat against the grain. If you like, dip the roast slices into the cooking juices before serving, or serve the cooking juices alongside the beef.

  • Heat the oil in a large pot or Dutch oven over medium-high heat. Place the roast in the pot, and quickly brown on all sides.
  • Fill the pot with enough water to cover the roast. Add the onion, garlic, celery, basil, salt and pepper. Bring to a boil, then reduce heat to low and simmer for 2 hours and 15 minutes, adding water if needed to keep the roast covered. Add potatoes and turnips; simmer for an additional 15 minutes. Add carrots; simmer for 30 minutes, or until roast can be pulled apart with a fork. Taste, and adjust salt and pepper if needed before serving.
